Kimchi Fried Rice - Matt's Recipe!

It has been a long time coming but we finally got Matt to do a cooking video! I was pretty addicted to Korean kimchi fried rice so Matt was inspired to give it a go :) Hope you enjoy!

Ingredients Used:
4 cups of day old cooked rice
1/2 onion
1 medium shallot
2 stalks of green onion
kimchi
2/3 can of spam
sauce:
1 TBS gochujang
2 tsp low sodium soy sauce
2 tsp sesame oil
1 1/2 tsp kimchi juice
4 eggs (separated)
1/3 corn oil
salt and pepper to taste
