  • How to make honeycomb recipe | Easy homemade honeycomb candy recipe

    Recipe for Honeycomb | Sponge Candy
    Ingredients:
    caster sugar - 200g
    glucose syrup - 4 tbsp(60g)
    honey - 2 tbsp(30g)
    bi-carb soda - 2 tsp(10g)
    Water - 2 tbsp(30ml)
    Method:
    Place caster sugar, glucose syrup, honey and water into a medium saucepan and place over low medium heat. Stir to dissolve sugar. Cook until mixture reaches golden colour or temperature reach to 160c. Remove from heat then add bi-carb soda and whisk quickly to dissolve. Pour into prepared bowl and set aside to cool for at least 1 hour. Once the Honeycomb candy cool down break into pieces of your choice and server.

    I made this, but must have let the sugar go too long. It turned out and looked nearly exact, but had a bit of a bitter burnt sugar taste. it was fun though!

      +John Templeton yeh it does happened sometime.. sugar is not easy ingredient to cook with... Try next time.. take it off the heat as soon as it turn into golden colour..

    Mine ALWAYS tastes scorched, no matter how perfect it looks. It's just awful. I've tried it 100 times and have followed the recipe exactly.

      +ferociousgumby sorry to hear that. It's not easy to make when you have to judge the temperature by looking at it. The best way use the thermometer and when the temperature reach to 160 degree Celsius then take it off the heat and add the bio carb and make sure you work faster. Sorry I forgot to mention Temperature level in the recipe. I ll update that.. best of luck😊

      Another reason could be the pan. The thinner the metal, the faster the item scorches. Using a heavy based pan reduces the scorching problem. Try to find a thicker based pan.
