- Overnight Coffee Cake
2 cups all purpose
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon, divided
1/4 teaspoon salt
1 cup granulated sugar
1 cup brown sugar, divided
2/3 cup softened butter
2 eggs
1 cup buttermilk
1 cup apples, peeled, cored, and chopped
1/2 cup chopped pecans
Mix flour, baking powder, baking soda, 1 teaspoon of the cinnamon and the salt in a bowl and set aside.
In another bowl, cream the granulated sugar, 1/2 cup of brown sugar and butter. Mix in the eggs, buttermilk, and flour mixture. Fold in the apples. Pour into a 9”x13” prepared baking pan.
FOR THE TOPPING:
Combine the remaining 1/2 cup of brown sugar, pecans, and 1 teaspoon of cinnamon. Sprinkle this over the batter.
Cover with foil and put into fridge until the next morning.
Uncover and let stand for about 30 minutes before baking.
Bake 45 minutes in a 350° oven. Sprinkle with powdered sugar prior to serving or drizzle with a powdered sugar frosting before serving.
