Mooncakes - it will nice to eat after 2days finished baked.
After baked put into air tight container and let stored for 2 days..If after baked the crush will be harden.
So let it be stored for 2 days then the skin or crush will be soften.

For those who haven’t tried it before, the outside is slightly oily, crumbly, and moist. The inside if the lotus root ones are well, lotus, and it’s a soft texture that you can sink your teeth in. It’s hard enough to get your teeth “stuck” but soft enough to squish. It’s slightly sweet, and the outside has a slightly “bitter” taste to it.
Your teeth don’t actually get stuck, and it’s not actually bitter, but that was the best way I could describe it.

This recipe works :) but here’s some things I found from my experience. If you have a larger wooden mooncake paddle, you’re likely going to have to double the recipe for dough and lotus seed paste. Just double the ingredients, prepare the same way. Also, I found this works much better with all purpose flour than with cake flour, if you’re choosing between them.

Please help a little here! It's extremely hard to find dried lotus seeds where I am from, is there something else I can use instead? I really wanted to do the recipe as is, but I just can't find those here. Any suggestions? I'd greately apreciate it♥

I suggest red beans paste to replace the white lotus. Is red beans paste available at your side?

What is lye water? In the US we use lye to make soap and unclog drains!

Not that soap making lye 😂 Kansui also called lye water or alkaline salt, is an alkaline solution that regulates acidity in the process of dough making.
