Anyone who's that quick to judge by nature aren't going to see or look into any of the Final Bosses. After all, they're only at the very end of the game, which people just won't get to if they don't like Kirby.
The thing is that Kirby seems to be evolving. When he discovers the Copy Abilities, they are very simplistic. By Super Star, his old abilities are becoming more intricate, for example, he is able to incorporate Burning into Fire, and he learns more complex Abilities. By 64 and Squeak Squad, he's combining his Abilities Ito new ones. Kirby also adapts to his environments. For example, in Planet 🌎 Robobot, Kirby's abilities seem to be changed for the mechanized environment, such as Poison substituting Water. And, he also finds enhancements and allies along the way. Planet Robobot also admitted to Kirby having infinite potential aka he could easily be a GOD. So, yes, Kirby grows stronger and smarter with every game. The anime implies that Kirby was created as Nightmare's superweapon, but awoken two centuries before schedule. Imagine if Kirby matured, and was loyal to Nightmare...

Add in the fact he could survive Black Holes and overall versatility with Copy Abilities, Kirby's an underrated powerhouse.

Kirby is up there in the top ten, maybe even five, strongest video game protagonists that originated from a video game. I mean, we got god slaying Bayonetta, Dante, Asura, Kratos, Okami Amaterasu, but Kirby’s taken down similar entities himself. Kirby has defeated Nightmare and Dark Matter, who are more primordial eldritch abominations than gods, and therefore comparable in power. Also has incredible durability if he survived a planet-wide explosion (Triple Deluxe), a fall from space (Planet Robobot), a black hole (Squeak Squad), and getting split apart (Mass Attack, Amazing Mirror). Can I just mention that I find the whole "Kirby is 8 inches" thing to be absolute bullshit? Kirby is up there in the top ten, maybe even five, strongest video game protagonists that originated from a video game. I mean, we got god slaying Bayonetta, Dante, Asura, Kratos, Okami Amaterasu, but Kirby’s taken down similar entities himself.
Kirby has defeated Nightmare and Dark Matter, who are more primordial eldritch abominations than gods, and therefore comparable in power. Also has incredible durability if he survived a planet-wide explosion (Triple Deluxe), a fall from space (Planet Robobot), a black hole (Squeak Squad), and getting split apart (Mass Attack, Amazing Mirror).

Can I just mention that I find the whole "Kirby is 8 inches" thing to be absolute bullshit? In the Megaton Punch remake/sequel in Kirby & the Amazing Mirror, known as Crackity Hack, I'm pretty sure the top amount of Megatons is somewhere around 699, and it gives off the same effect. I actually once reached the limit in that one once. It was cool.
Now take this theory, and see what you can get by measuring it through Crackity Hack's top Megaton force. Crackity Hack is basically a much more buffed four player version of Megaton Punch, after all.
