I loved watching Justin Wilson back in the day. I have that identical roaster with lid that belonged to my mom!

We have plenty of cooking shows hosted be comedians. Guy Fieri, Emeril, and Isaac Toups come to mind. Justin Wilson just had his own distinct style no one could ever emulate. That said, ai wish there was more Cajun presence in media in general.

Used to watch him every Saturday morning on pbs back in the day, brings back so many memories. It also reminds me of how old I got and how quickly it happened. Good God, time flys. Anyway, it's always good to see the late Justin Wilson. I'm sure he's cooking and eating up a storm somewhere.

Justin was the first tv chef that I watched religiously back in the early 80s. Him, my granny and my great aunt are the reason I decided to make cooking my life's work. I been retired now for 14yrs after 25yrs of cooking in restaurants. The thing I liked about his shows was that he went slow enuf that you could write down the recipe. That's how I got his recipe for Cajun coleslaw. 😊❤️ Thank you Mr. Wilson!!! I miss you. 😞❤️

I always add horseradish to cole slaw but never thought of adding it to potato salad. I will have to try that.

The way he Laughs when inserting his finger in the roast to push the garlic in and how he does it multiple times per clove is Super Sus but Goddamn I love this guy.

Did the audience got to eat the food that he made?.

I always wonder that myself. I would like to think they did if he made that much and wouldn't go to a waste.

I'm thinking yes. He cooked that 20 lb. roast along with using 5 lbs. of potatoes for the potato salad, given those proportions, plus the fact he mentioned the audience will get taste the dishes, I think they got to enjoy his efforts. He's one of my favorite chefs.
