    Super professionali, organizzazione al top (del resto è un 3 stelle), tanta ricerca e un team eccezionale.... solo un appunto allo chef che dice che non aprono le porte a tutti e che IS è stata fortunata ad entrare dietro le loro quinte.... bhe in realtà è esattamente il contrario! E' il ristorante ad aver avuto il privilegio di poter essere apparso su questo canale e potersi misurare con realtà Italiane di alto livello, mi dispiace per lo chef ma qui non se la può tirare troppo (e probabilmente lui in fondo lo sapeva anche) 😅😎✌🏻

    grandissimo contenuto. vengo da una recente visione di alcuni episodi della nuova stagione di chef's table, quindi il paragone è fresco e sincero. la serie su netflix è interessante dal punto di vista tecnico e di contenuto, ma insopportabile sul lato della narrazione e della scrittura. quello che invece portate voi è proprio ciò che cerco: non le storie dietro i ristoranti e i cuochi, di cui non mi interessa nulla, ma un focus bello dritto sul piatto e sulla ristorazione.

    Solo io ho notato il cameriere col codino che quando porta i piatti ha il pollice dentro di essi?
    Secondo me è una grande errore in qualunque ristorante, dalla trattoria a quello stellato.
    Per il resto tutto fantastico. Sicuramente questo ristorante si rivolge ad una clientela che ama i dettagli.

    For all the "they look so sad" people.. remember that they are there by choice. Yes its exhausting but the only people forcing them to be there are themselves. You wouldn't bat an eye at people dedicating their lives and getting paid little in gymnastics or physics but here you're shocked? This place is meant to be elite; where you go on a special occasion. You can like burgers but still appreciate the madness and dedication it takes to serve you a carrot slowly grown upside down in Japan by a monk.

    My experience in January 2020 was incredibly disappointing. They weren't plant based yet and their duck, which they were known for, was almost inedible so maybe they were having an off night. We went to Gabriel Kreuther the next night and couldn't have had a better experience!

    Chef here.. the best way to make a small fortune in the restaurant industry... start with a large one! The easiest part of my day is making beautiful food that our guests love... the hard part... making a PROFIT with the beautiful food that our guests love. EMP with 75 staff feeding 150 people.. even at $1000 a head, your margins must be razor thin! High-end steakhouses can run at 50% food cost because their revenue is high..where as a from scratch pizza shop is only running at 15% but that's offset by relevantly low revenue..At the end of the day.. the chef at each makes about the same..If you want to get rich in this industry, don't go into fine dining! buy a chain of franchise's then hire people to do your job.

      75 employees back of house? 150 guests a night? Check average had to be 1000 for that to make sense

      @@masterful9954 it is average 1k checks for a table of 2, tasting menu with drink pairings and pre dinner cocktails will get you to 1k dinners pretty quickly

    A New York un ristorante di questo livello deve avere dei costi di esercizio e dei prezzi di listino decisamente più alti rispetto ad un pari livello sito a Los Angeles o a Miami.

      Altra cosa che mi lasciò abbastanza basito fu un piatto con letteralmente 4 quartini di fetta singola di pomodoro crudo, un'acqua di pomodoro e a lato una crema di pomodoro. Non per fare l'italiano medio ma in nessun momento durante il pasto mi son sentito particolarmente illuminato o stravolto dalla lavorazione.

    Non lo so, mi sembra tutto così serioso ed esasperato, come se "eccellente" debba per forza essere sinonimo di complicato, arzigogolato, difficile.
    Poi parlano di "have fun", "loving what you do", "enjoyment", etc. e non ce n'è uno che sembra divertirsi o sorridere: non ho detto che debbano sguaiarsi dalle risate, ci mancherebbe, ma sembrano tutti prendersi TROPPO sul serio..
    Ancora con questa lagna del "Yes Chef!".. E mica state sbarcando a Omaha Beach nel '44..!!
