In this Mexican street food recipe, I combined my great-grandmother's beef techniques with my modern way of cutting time not flavor. What takes over 10 hours to do; we did in 3 hours. Best of all we achieved an authentic tasting Mexican Street taco.
Ingredients
4 pounds beef cheek
3 pounds chuck beef
Season beef with- 1/2 Tbsp black pepper, 1 tsp salt, 1 tsp Mexican oregano
6 garlic cloves
1 medium onion
2 green onions
2 Anaheim peppers
2 chiles caribe or jalapeños
2 bay leaves
1/2 Tbsp salt
1 tbsp Mexican oregano
3 cloves (spice)
1 tsp coriander
2 chiles de árbol
1 Chile guajillo
3 cups of water
Pressure cook for 1 hour allowing a slow release
Then slow cook for 2 hours on (high)
Salsa verde recipe that retains flavor and spice
20 tomatillos
5 Serrano peppers
3 jalapeño peppers
1/4 onion
Small bunch of cilantro
1/2 Tbsp salt
Tacos
Small corn tortillas, beef, onions, cilantro, salsa verde, and lime

You always look so stylish and beautiful with full makeup, but you're also so beautiful au naturel! There are tacos de cabeza/cheek as the regional style of what is called barbacoa here in Texas, and it's usually just seasoned with salt and pepper and possibly some garlic and bay leaf so you can taste the rich meatiness of the beef cheek, but I am excited to try this other style with a salsa verde and the addition of the chuck to stretch it out and add another dimension to the texture. Looks soooo fantastic!

Rare to find beef cheek in my area, so I go with the cheapest cut I can find. Slow cooker is your friend. Salt, garlic, onion, peppers, and a few cups water. 8 hours, sometimes a little longer. Use in everything from a breakfast crunch wrap, taco or just with some cheese for a sandwich.
