I have just started making sourdough, too! I haven’t had any flat loaves like that BUT mine isn’t getting the right “oven spring.” Learning all the lingo.😂 I have used the farmhouse Boone recipe and they do rise and taste good and have good crumb. I think I’m not understanding what I am doing during the bulk fermentation period. I made it three days in a row and have to take a break over the weekend to go out of town. I’ll be back at it on Monday! I’ve used both bread flour and AP and there wasn’t much difference. I’m going to try bread flour with a little whole wheat and see how that goes.🤷🏻♀️ Keep posting!!
Okay I SO agree about the bulk fermentation period. I don’t know what I’m looking for there! I agree about the bread flour versus AP too - no significant difference. I love the addition of whole wheat. I did another with a different recipe yesterday and will post that asap! Came out better than this one but not perfect still
I have never baked bread before… but i remember reading online that baking bread with a pan of hot steaming water in the oven can help with the rising process!

Yes! You’re so right! Idk if it holds true if I’m using a Dutch oven though. I’ll google it! 🤍

I appreciate that and while I wasn't sooo happy with this loaf, I do agree that bread is bread and can still taste so good!
