      Just allowing meat to rest for 30 minutes will stop it bleeding onto the plate. Hope that helps :)

    One of our favourites....SPANISH lamb is to die for...the missus adds red wine to a 2kg leg and surrounds it with potatoes....cooks slowly like yours and falls off the bone....this recipe looks divine with the rosemary old chap 👍🏼👍🏼
    P.S. She has never changed the recipe until the last time we had it (last Sunday) as she now insists on John Kirkwood Yorkshire puds with it 😉

    I'm pleased to see the fat is reused for roasting potatoes and vegetables. Even in small amounts this fat adds a lot of flavour to other cooking and enlivening leftovers.

    Tried cooking a roast lamb again ! Saw your video and liked the tips on keeping it moist (water & foil), plus butter in the gravy with corn flour not flour, so no lumps this time. Browning it off for an extra 30 minutes definitely makes a difference. Thanks for sharing from NZ ❤

    Magnificent as ever! I can smell it from Australia. I've never yet cooked or eaten Yorkshire pudding, so I must look up your recipe and treat myself!
    I do love large hearty chunks of crispy roasted potato, pumpkin and parsnip with ,my roast lamb, plus masses of peas swimming in that gravy and mint sauce. Nothing nicer. Thanks again for your meticulous instructions John.

    Good camera work, clear and concise explanations, and a very clean kitchen. The meat looks a tad dry and the gravy is just a fraction thin to my taste, but these are personal choices, of course. The one thing that I would not do is to bring the meat in direct contact with aluminum foil without baking paper in between. Thank you for sharing your experience.

    i love to watch and hear you do your cooking, and i live near whitby and your recipes are very similar to how i cook and they were passed to me from being a child. My family aare from Durham. i would happily cook all day but i dont use any Herbs at all i only use salt and pepper as i think herbs steal the real flavour plus i hate the taste of them . I have learned a few tips from your way of cooking which i am going to try out Thanks a lot john x

    Slow cooked lamb is amazing, I love to pull the meat apart with forks and shred into smallish pieces then cover with the gravy juice. Great to serve fresh or use later and great for sandwiches.

    Looks great, I would use the lamb fat to make a roux though, adds even more flavour. You can use the leftovers for a lamb and apricot jam sandwich the next day. That's what we do!

      Kelvin....I always make a curry with the rest of the meat in the slow cooker and finish up with an amazing sauce afterwards that I add rice to....best Mulligatawny soup ever..🤪

    Looks brilliant John, my mother doesn't like rosemary or garlic so I have to improvise when cooking for her. I make the rub with mixed herbs instead of rosemary, and sit the lamb on a bed of roughly chopped carrots and thick slices of onion with a glass or 2 of wine and a few halved mushrooms. The wine/carrot/mushroom/onion/meat juices concoction blitzed in the blender is an absolute delight as a thick gravy.     Hello from Texas, John! I have never cooked lamb - or eaten it, but I've had a (boneless) lamb roast in my freezer that I bought a while ago and have been unsure how to cook it. Being from Texas, my husband wants to smoke it for several hours, tho! I will give an update once I do cook it.

    Just did this tonight, the whole table loved it! I did a 4.5 pound leg, and found it cooked into ~165F after 2 hours. I left it only for 20 minutes in the uncovered phase, resting temperatures were into the 170s by then, and I was worrying I'd overdone it. No, it was excellent! Previously I'd done them to 135-145F, but I'm changing my mind, this is a more satisfying taste. Thank you John!

    Beautiful, thank you for posting. I did my first ever one following what I thought was good advice, to find a very large range of donenesses in it. The outerparts were a beautiful medium, but towards the bone was too rare for anyone's preference. My next one I'll get the bone out and butterfly it, but my next bone in leg will be tour way, this looks perfect to me. Cheers, great channel, right up our street, subscribed.

      I prefer well done for any lamb cut I eat. Medium rare for me is only for steaks (mostly because I have a dental bridge and anything chewy or sticky will yank it out. It's happened before). I'll even take medium well as a compromise.

    This looks great. I offer the following for comparison. This is basically how we do this in the US, but we'd almost always add garlic. Lately, if I have really good quality lamb, I'm just dry roasting with garlic, salt, and pepper. High heat for the first 20 min, then low heat until the it hits the desired internal temp - I usually shoot for medium rare, but If I think the lamb has more connective tissue, I go for medium,

    We are having lamb for Xmas as it's my husband's favourite, I don't eat a lot of meat but I like the leg because it is leaner. If I was cooking it for me that's how I would like it done. It looked lovely. But my husband likes it cooked less so I'll have to cook it the way he likes it. I'm not bothered about having any, I like veg and yorkshires. I really enjoyed watching your demonstration

      We have similar issue in our household. I slice half the meat and slip that into the pan juices, so it cooks a little more, while I thicken the sauce around it.

    I do beef brisket this way and it comes out fantastic.
    Excellent leg of lamb.
    I wish it was more popular in Texas.

    Looks amazing John. Would you consider doing a video on how to carve said leg of lamb, to me it's pretty daunting and I always end up hacking it to pieces. It doesn't look as good as yours.
