Are you supposed to eat it in three bites? The large piece of chutoro and the smaller pieces of otoro? Eat the mushrooms by themselves or combine with the tuna pieces?
I love it but would be happiest with the tuna in it's simplest form and not so much embellishments. Every component looks outstanding nonetheless. Would I pay top dollar for this? Absolutely.
In my opinion you may be correct. Shitake often taste of urine and I don't mean to insult. Shitake are inexpensive, everyday mushrooms and while I appreciate these may be special from the cultivator, they're still just shitake. I avoid using them post 1990 when I discovered (what I consider) better mushroom products.

This dude treats mushrooms and radishes with as much respect as some of these other chefs treat the rarest caviar. THAT is a hallmark of a great chef.
