The GBA version is pretty damn impressive. It had a smooth framerate and good 3d. Although the port of the later SSX3 for the same system is much more impressive. As for which one is the best it's probably the Xbox version as always. The PS2 and Gamecube version are not slouches either but the quality is definitely higher in the Xbox versions with what the bumpmaps and all
Overall the Xbox version is the best for a few reasons. It looks the best (thanks to that bump-mapping), has the best sound quality, the most stable frame rate, and it’s the only version with the Sticky Boards and the Annette Board cheats. Although the Xbox version is missing a grab button for some of the four grab tricks, Kaori’s Annette Board more than make up for it since this board in particular allows for crazier tricks that you cannot do on the other versions. Though all three versions of the game suffer from some degree of frame rate issues, it’s definitely the most problematic on GameCube. Speaking of GameCube, the GameCube version lacks all the DVD Content due to disc space limitations, and it also doesn’t allow for as many tricks as you can do on PS2 unless you activate the four grab cheat, which is a cheat code that was recently discovered by the awesome SSX community.
I grew up with the GCN version, and I never had any framerate issues, plus the game wouldn't even completable if you couldn't do all the tricks without a cheatcode.

There is also some form of self shadowing on the characters for Xbox.
This doesn’t reappear in SSX3, despite the increased visual fidelity
