I feel like people that prefer cakey brownies are the ones the prefer corner pieces. Fudgey brownie lovers are the center piece but like it is all the same pan.

re: resting time If I had to guess, I'd probably say all those half-done proteins are all collapsing into themselves without the lifting assistance of the rising steam? That would be bad news for everything else, but I can see how that might be a positive in a brownie!
Hey! I've been doing this "resting" thing for quite some time now, after reading about it in a food science blog. The reason why it makes such a difference in the end is less science-ey than you may think. Letting them sit out for those 15-20mins allows the pan and the actual brownies to cool down a fair bit. When you put them back into the oven to finish it takes several minutes for everything to come back up to temp and continue cooking. The outer portions of the brownie therefore become less hot than they would if you left them in the whole time, and so carries over much less heat to the inside potion of the brownie once you take it out of the oven a second time. You actually end up cooking them less thoroughly doing this, but thats pretty much what allows for a dense fudgy brownie thats not at all over baked and it allows for the fudginess to extend all the way around the brownie, eliminating the crusty edges! The more you know!

And secondly if you put the salt on right when they come out will it stick on top? Cuz I’m worried about the salt falling off when they are picked up. Thanks in advance and I’m also a baking novice so I’m sorry if these questions are stupid
If you use sweetened chocolate you get less chocolate, if that makes sense. by using pure unadulterated chocolate, you get maximum chocolate flavor. they won’t taste the same with using sweetened chocolate and less sugar. and yes putting the salt on top can lead to it falling off, if you want it to really stay maybe try adding the salt when you’re letting them relax on top of the stove after 15 min in the oven.
