My DIL & I put up 13 dozen from a local farmer in about 55 minutes. I used the wooden cutter, with the creamer. Loved the cutter, as I have arthritis in my hands. The last time we did it, I made it about halfway before needing to stop. Also, so much quicker than knives. We cut the corn raw, then (add a little water if needed) bring the whole pot to a simmer and when it turns bright yellow it's ready. You can cool the pot by placing in sink of cold water. Then bag and freeze. Like you, we don't add salt or anything. We typically use for a holiday dinner or family get together. Seems like 13 doz is good for us a year. Mom used to put up 100s and 100s because we didn't supplement with grocery corn. Great video. My job when I was a kid was to shuck and clean it. And the jobs except cooking were always done outside.

I live in a small village in Western New York state and don't have enough space to grow large crops.
I mostly grow in containers for fresh eating.
When I can I go to my local farm market and buy large quantities.
They give me a discount because of this.
I find buying at the farm market allows me to acquire vegetables and fruits in smaller quantities that I can work through in a one day to be less stressful than having a garden where it's all ready at once.

I have a tip for you! A good way to blanch your corn prior to freezing and an easy way to husk it is to get yourself a big cooler (it can be a cheap one, I really like a drain hole at the bottom) and put your corn, husk intact, in the cooler and cover it with boiling water and close the lid. It takes a few minutes... but once the husks are yellow they're done and you can drain and cool! Then just cut off the ends, squeeze out the cobs (much easier to get the hairs off), cut off any bad sections, and stack them in your zip lock bags and toss them in the freezer. If you leave them for about an hour they're fully cooked and hydrated and you can throw them on the grill from that stage and get the same flavor without drying out and it's super quick! Hope this helps!

Fun tip that I learned from my high school math teacher. If you have a metal Bundt pan, you can balance the cobb on the hole in the middle and when you cut it off the kernels, they fall into the pan. 🤯

I would encourage you to use a white garden hose when filling up your bins with cold water to cool the corn. Apparently, they are safer for food stuff. It's just something that I remembered from days going out in the RV.

If using knife to remove kernels, put cob on upside down cup in large bowl. As kernels are cut they fall into the bowl so it falls in one bowl, not scooping up. Nice and tidy, any spills on porch are for the dog lol

This is why I love my vacuum saver. we would blanch all of the corn but we would leave half of our harvest on the cob put enough in a bag (1 cob per family member) and 1 pat of butter per cob seal and freeze. When we wanted corn on the cob we could just throw a bag or 2 in boiling water cut open and enjoy. I'm not sure where my wife found it but we had a gadget for taking the kernels off the cob it was basically a lag screw you put in a power drill screwed it into the cob then there was a hand held piece with a hole and a knife blade and you control the depth by how hard you squeeze essentially making the hole smaller . cut hours of our corn day.

All that sweet corn looks so good. I've personally never been a fan of blanching. I just cut all the corn off the cob and freeze it straight. It defrosts and cooks up beautifully.

Lovely tribute to MOM! I love that you carry on the traditions and honor her. Also, I don't have room to grow corn, my son's family are not "yard people" but they love good food. I make them a deal to pay the water bill and I grow corn and squash on their half-acre and share the reward. Look to your community to see if you can find someone willing to do that too.

Bringing me back to all the years of picking 30-60 DOZEN corn out of the soggy dew-drenched corn fields multiple days a week for our corn stand and to put up for winter. Sitting on the edge of our pickup truck with my sisters husking tens of dozens of cobs of corn then putting it up inside. You can’t buy memories like that. 🏡 I’ve tried all the gadgets over the years and in the end, the knife always works best.

I was taught by forever atanding corn growers....
Put the corn in cold water, bring it just to a few bubbles tyen turn it off. It can sit in the water for a long time and wont overcook.
Ive been doing this for years and its always perfect, never starchy!

A long time ago, when I was a kid, the males of the family were outside blanching the corn cobs using their lead-melting propane heaters. It kept the kitchen cooler where we females used knives to cut the corn from the cobs and then bag it up for freezing. A trick I learned was to elevate the cob on a small glass or bowl when cutting off the corn. Thanks for awakening that memory for me!

I'm always looking forward to the email from the farmer signaling that the season will start for fresh picking. It's an hour drive..We go as family, picking bags and bags full while eating a few fresh ones in between the picking, that instant sweetness can only be tasted while you stand next to the plant😋. Going home with a car full of sweet corn to surprise many elders, families and friends with kids and ofcourse putting a bunch to freezerland..

Use plastic rolls of table cloth or newspaper on the counters and floor so that you don't have to carry heavy pots of boiling water. I use a bug bag of ice for each bushel of corn. I use an electric knife and a bundt pan to cut the corn off the cob.

I cut my corn off the cob, put in a roaster pan with some water and a little sugar and roast in the oven for an hour or hour and a half. Let it cool down them put in containers measured out to our needs. No blanching! IT TASTES LIKE FRESH CORN FOR A YEAR! Recipe is from my friend from a farm in Saskatchewan, Canada. Love your videos, and love to see the kids helping and making memories! I use a knife too. It works best for me. One thing we do different, that you might want to try, is we set the but end of the cob on the center of a bundt pan when cutting. The kernels then fall into the bundt pan, and are easy to scoop into the bags. Less mess. Find a couple of bundt pans ( or angel food cake pans) at the Sal. Val. or garage sales just for corn season!

I grew sweetcorn for the first time this year. The first batch looks ready, but much smaller than yours and the one ear I took to look at was milky, sweet, but a lot of the individual corns (?) were very small and unripe.
I don't blanch many things before freezing as frozen veg ends up in stews, sauces and soup anyway, but if I get enough corn I will do that for sure!

We just did our corn day 2 weeks ago. 800 ears yielded 164 quarts for 3 families. We do everything outside thankfully it wasn't scorching hot day & we were done by 1:00! We have different opinions on how to cut the corn lol. Some use a knife, some the wooden cutter & I bought one of those black & yellow things for a younger child to try so they wouldn't get cut.

really interesting watching you guys , i also grow a ton of corn here in France, but my freezer prep method is very different , all good cobs get cut into 3 to give me cobettes, i freeze these without any blanching and they are really good not mushy etc, i think the main stem of the cob helps with this, but yes any cobs with damage i also blanche before freezing as loose corn

Hi Guys, I'm following your channel from Sydney Australia. Corn planting season is just around the corner for us in September. I've been growing corn for about 5 years now and like you I tend to freeze it for the winter. I usually just give it a good wash and cut the cobs in half. Then put them in freezer bags until needed. We had a really good season last year and I still got half of my crop in the freezer. Cheers

I live in BC Canada and Walmart has been selling Washington corn for the last week and really cheap too so I tried it and man, that's the BEST corn I've had in years!! Sweetest of the sweet. This made me tired…we used to freeze corn this way too. But I will share a very easy, delicious, quick recipe with you. All of my friends do it this way now, it is known around here as “the corn recipe”!
You are absolutely right that it has to be completely cold before freezing. I leave it in fridge over night.
    Freezer Corn
    6 cups corn cut off
    1 cup water
    1 1/2 teas salt
    1 Tab sugar
    Boil together 1 minute
    Cool completely!
    Put in freezer bags
No need to add anything else when serving, just heat through.
It is delicious and so easy.
You can make larger batches at a time.
    Please give it a try…

Right on! I am hoping to get some corn this year. Like peas, I prefer it not blanched when freezing - I find it maintains flavor and stays tender. I simply cut off the cob raw (with a knife) - there is corn juice spray though. If freezing, it goes right into the bag. However, I have taken to canning now instead. I prefer it over frozen. To BBQ the cobs, I leave husks on and soak it in water for a couple hours or more before putting on the grill. Great job! Liked the editing extra's...good job!

I was wondering if you guys have ever planted Bent Corn? That Sweet corn looks amazing. Reminds me of Sunday dinners after church with my grandma. Because it was only the 2 of us sometimes she would Sweet Corn and we would have Tomato and Biscuits with it. I miss those days. She passed away in 2016 but the memories are still alive. Thank you guys for all you are doing.

Are you thinking of Dent Corn? That is the hard corn, that's typical for feed or grinding for cornmeal. Named dent, because it gets a little hollow dent at the edge of each piece once it hardens.

@@heathernotzdaniels6350 I am looking to grow it so I can make my own meal. I wasn’t sure if they had tried to grow some for the chickens?

Good memories 😊 We have grown dent corn. It was fun to make our own cornbread! Not really any different to grow it except you just leave it out on the stalk until it’s dry.

    • @morethanfarmers
      @morethanfarmers  4 หลายเดือนก่อน +1

It would be a fun idea, but it just wouldn’t be feasible to use up the amount of space to grow enough for the chickens.

@@morethanfarmers oh ok so you would just leave it like you do your popcorn. Also did you have to do anything different in making cornbread with your own corn? Like when you buy it you don’t have to add anything but water or milk. I hope this makes sense. Lol

Your corn is amazing !! Do you put salt in the water before you blanche your corn in boiling water ? Yay for great advice from your mom in the corn process . It is awesome to see parents teaching the art of home-steading and working as a family to harvest the fruits of the labor. Fun family video, thanks.

Such great teachers! I am weird & worry about walking in corn to possibly get ticks. Tick phobia lady! You all are always an inspiration! Had to pause making my fruit leather to comment. Thank you for sharing. Take care, Fran

We would prep ice in advance for the cooling process. Freeze milk jubs and 2 liters bottles, anything will work. That hot corn will constantly get the water hot. Such good memories from my childhood doing it as a family

The corn looks amazing! We don’t have the abundance of corn here in the U.K. like the States. However, we had a kale, chard and cabbage day yesterday…harvesting, blanching and storing in the freezer yesterday. So much work, but it’s so worth it throughout the winter ❤ Thank you again for your videos. I wish I could ‘join’ but that doesn’t seem to be an option here. Bless you guys 😊

I can my corn. Then the only cooking is the pressure canning part. I found a corn shucker that is a circle. Stuck the corn in a twist the cuff. Afterwards, I use the peeler on the cobs to get the rest for creamed corn. Put 5he corn in jars, add salt and water, then pressure can.

Few days before doing corn, just freeze containers or milk jugs full of water. Then put frozen jugs in tubs with cool water. Cool down of blanched corn goes much faster and not wasting so much water.

I am from Durban South Africa. When I freeze sweet corn I cut the kernels off first, then blanch etc the kernels. Much easier. Just as tasty and juicy. Try it and see.
