- Garlic Bread goes with everything. That’s all that needs to be said.
3 to 4 cloves of garlic
1 tablespoon of fresh thyme leaves
Salt and Pepper
1/2 cup olive oil
A loaf of your favorite bread, cut into thick slices

i began my oven build with the only thing on my mind being pizza and maybe a roast or loaf of bread. you’ve shown me how much more and gotten me so much more excited to be done with it. the oven floor was laid yesterday im hoping to finish the brickwork on the dome by monday. if i have the last stone in place by wednesday the first time i cook in it will be Christmas day. im hoping it’s a day or two before! i really appreciate the time you put into these videos

Clive, I forgot to mention how much I admire the use of depth of field here; always shallow in the right measure, bringing attention to the subject without looking contrived or feeling artsy. Few people know how to dose depth of field quite as exactly as you do here, and this is a very, very sophisticated aspect of photography. Framing, lighting, exposure, those are relatively 'easy' to get right, but finding the proper use of depth of field is a tricky thing. And Goddess knows too much of it, like too much rosemary, can be nauseating... ; ⁰ )

@@teop7887 I built an oven for nothing that's been the base of our wood fired bakery. after 2 years it's taken a beating but still working. I'm in the process of building a replacement, I'm interested to see if a bought oven will be better.

Good to see you back Clive. The recipe I picked up from a friend here in Cyprus is very similar - oregano instead of thyme, but being Cyprus a squeeze of lemon is also added. Traditionally, bread here is denser and cut thinner, so it comes out quite crispy but tastes great. Not used parmesan yet - will have to try that next time the oven is lit.

Listening to this on my Bose QC45s takes this production (and it is a production) to a higher level. I will fire up the Ooni Karu this afternoon with Australian Iron bark chips and give this a go, I have thyme and oregano and basil jumping out of their terracotta pots, so I might do some bruschcetta aswell.Thanks mate, and I love your dog...

Hi Clive, I accompanied the chicken with some pan grilled zucchini with tomato and garlic.
However, I think I overpowered the main dish with either too much mustard or I didn’t add enough crème fresh.Because I’m confident with my cooking i eyeballed the measured amounts, I should have known better with a new recipe. Still loved it though. ❤️

Clive , a question for you. I guess we live in a different climate zone (I’m in Toronto) 😂. But in a summer time we both have some rain days. I have an Italian traditional dome oven, which I covered with mosaic stones last summer. What is your annual maintenance to keep stones or tiles well? Do you apply some kind of sealer?
The only thing I do is give the exterior a coat of latex paint once a year. The tile is very durable, and has exterior grout, so it needs very little maintenance.
