cowboy lump charcoal, old cheap Weber grill, Grill your ass off whiskey salt and Platoon sergeant seasoning. have grill temp 450-475 and throw the meat on for 3 minutes each side. check temp with instant read thermometer. I like mine a little more done then room mate but the searing is the key. Also i keep grill close so the last half of the steak i can cut into slices and throw back on grill for a new sear. OMG the yum factor of a fresh sear slice.
I really liked the way you explained it and the handling of the food! I am new to the wood oven world and very exited! One major beginner 's mistake I made was not to heat up my oven the day before and then again the day of cooking as it wasn't used for a whole year.
Next time leave the cast iron to heat up then take it out, put steaks on to get the crust, put them back in and then eventually flip. Just an idea since cast iron should be pre heated 🙃

Leaving a steak out to become "room temp" is a myth. They will only raise about 8-10 degrees in an hour. He should have dry brined over night with salt and garlic powder in my opinion.
Hes correct. Its a fukin myth. Take that steak out of the frig and toss it on your hot grill. Forget about all that letting it set to come up to room temp bullshit.

Your home oven doesn’t get hot enough to cook Napolitano pizza. You don’t need a big oven like this one, but a less expensive Ooni does make a difference.

We recommend 135 to 140 for steaks, but you're welcome to cook to your desired internal temp.
