I agree with Phobos, even thow your goal is a mame bonsai, you have to think that the tree have made an invest alot of energy growing those leafs, you have to wait they get back those "investments" before cutting, or you will be always in a energy deficit and slowly killing the plant
should have planted it side ways so your trunks not straight then boom slant but well done keeping her alive anyways! keep her under grow lamps over the winter if indoors should just let it grow just now ! im working on a bigger one just now thinking it up the branches are growing wild lol looking good tho keep us updated
why would you expose it to grow lamps during a period where it is supposed to go into dormancy? (bonsai noob, genuinely curious, not trying to start an argument)
There is another species of zelkova.
I think you should let the foliage grow a bit more before pruning - that way your plant gets enough energy to stay healthy.

Horticulture and Bonsai est2005 yepp I have it under grow lamps and I'm building up the foliage and roots before I mess around with placement.
