INGREDIENTS:
1. MINT CORINDER CHUTNEY
1 cup chopped fresh coriander (You can also make a version with Parsley too)
½ cup of fresh mint (only the leaves , stem give a bitter taste)
½ inch ginger
2 cloves garlic
1 tsp roasted cumin powder
3 green chilies (or as per taste)
¼ tsp black salt (optional)
1 tsp sugar
2 tbsp lemon juice
1 tsp salt or as per taste
Water to grind
½ cup plain yoghurt/cream or mayonnaise for creaminess (Optional while serving)
2. COCONUT CHUTNEY:
1 cup grated coconut ( fresh or frozen). If frozen bring to room temp.
1/3 cup roasted peanut. Can substitute with roasted grams
1 string fresh curry leaves (can make without this but preferred)
1 tsp of cumin seeds
2 green chili
1 inch ginger
1 tsp sugar
1 tsp Salt or as per taste
1 tbsp lemon juice
2 green chilies
For tempering we need :
2 tsp oil
1 tsp mustard seeds
1 whole red dried chili
1 string curry leaves. (4 to 5 leaves is enough)
3. TAMARIND CHUTNEY:
½ cup Tamarin pulp
1 cup Sugar/Jaggery or dates
½ tsp Roasted Cumin powder
Pinch of Hing (asafetida) - optional
1.5 tsp spicy chili powder
½ tsp Black Salt (optional)
2 tsp Dried Ginger Powder
1 tsp fennel powder
¼ tsp black pepper powder
1 tsp whole cumin seeds (optional)
½ tsp salt
4. TOMATO CHILI CHUTNEY:
6 fresh tomatoes (pick ripe ones). You can use canned ones too.
1/4 of a large onion
4-5 dry red chilies(I am using spicy one if u prefer milder use Kashmiri chilies)
6 cloves garlic
½ tsp black prepper powder
1 tsp Sugar
1 tsp smoked paprika
2 tsp vinegar
Salt to taste.
1 tsp oil
5. MANGO CHUTNEY:
500 grams mango (fresh or frozen)
2 inch cinnamon
4 green cardamom
1 star anise
2 tsp grated ginger
1 red fresh chili chopped for color & heat (optional)
1 tsp chili flakes (this will give a slight hint of spiciness and will balance the flavor)
1 tsp roasted cumin powder
1/4 tsp turmeric powder
1/2 tsp nigella seeds (optional)
½-1 cup sugar quantity depends on sweetness of the mango (start with 1/2 cup and then adjust)
½ cup vinegar
¼ tsp salt (or as per taste)
1 tsp oil

    All these things could have easily been done in a he chopper. All these utube cooks use it e hand chopping and hand grinding. It’s all drama just trying to impress people. What are the machines for. I’m am a very good cook myself and I always grind and chop everything in the machines and it doesn’t make any difference in the taste. Cook it in the air fryer. It’s healthier and quicker.😉

    I cooked this recipe of yours today! As I used fresh tomatoes, the colour didn't turn out quite as red. I fixed that with some smoked paprika, which rounded the flavours very well. Thank you for the idea and the video!

      Thanks. Black salt or kala namak is a bit different . It is like burnt salt, little pungent and used in chaats etc in india. 👍❤️❤️

    This looks fantastic, although I don’t feel confident in buying the spice ingredients as I am not educated in how hot they are to able to shop for them, please can you recommend mild spices/powder?

      Around 220 c for 15 mins approx. But you have to trial I an air fryer as it depends on the air fryer, chops etc. It's easy to get dry or overcooked in an air fryer so you have to be careful. All the best 🙂👍❤️❤️

      You can actually cook the whole dish in the pressure cooker using the soaked rajma. If you just want to boil the rajma it should take around 20 mins for properly soaked rajma.👍❤️❤️

      Yes, they are fine to eat. I used to chew the seeds too when I was a kid, not anymore 🙂. I just remove it to make the gravy smoother. 👍❤️❤️

      250c bake for 10mins then take it out and brush butter over the top then cook for a further 30mins

      Brushed butter after the first 10 mins, then another 20 mins bake at 250c, then 3 to 5 mins grill. A total of 30 to 35 mins depending on your chicken. 🙂❤️❤️❤️

      No need to wash the minced meat. They come clean and packaged. If you don't trust your butcher buy whole and mince it yourself 🙂❤️❤️

    A great recipe. I used a smaller amount of pork so had to reduce the ingredients accordingly. Didn't quite get it right so it's still a work in progress to some extent but it was lovely and I am looking forward to having another crack at it. I was lucky enough to visit Goa a while ago and had Vindaloo there. This recipe seems very close to what I remember so thank you for sharing it.

    Mayonnaise makes sense. A lot of kebab chefs have started using it, because mayonnaise contains eggs. The egg and oil emuslification provides browning, and gives a protective layer to the meat.
