What is Roucou (Annatto Extract)?

  • Roucou is our local term for Annatto extract. Annatto is the seed of the fruit from the Achiote tree also known as Bixa Orellana which was the name given to the tree by the Spanish. However in Tupi or Tupian language which is a collection of languages spoken by the first peoples in South America, the seeds are known as Uruku. So essentially, the name roucou is the original name for the seed/plant and it is the name we use to refer to it by to this day.
    Annatto was used by the indigenous peoples on the island both as a dye, body paint, lipstick as well as a spice in food. Today it is still widely used in cuisines throughout Latin America as well as in Vietnam and The Philippines. The extract is also used as a natural food coloring in many products like cheese, butter, margarine and ice cream.

    Hi Kevin, I am from Tobago, the same area as the PM...I 'm sure he knows about Roucou. However, I just found out that while we used it as a condiment, it also has Tocotreinols, the most natural form of Vitamin E. Regarding the health benefits, it supports the Cardiovascular and Digestive systems; also prevents and fights Cancer. I believe that this was one of the well-kept secrets of the older folks!

      Yep, I got a big shaker container of Annatto dry seed, typically sold for coloring in certain foods (like in Mexican dishes). I chew about 10 of the dry seeds with my morning coffee for the vitamin E Tocotrienol content. Tocotrienols are more powerful than tocopherols for "E", at least that's what I heard. Tocopherols must be cheap, since that is what daily vitamins have usually. PS: I'm old, lol.

      Would possibly be great to combine with molasses which is a great substitute for ketchup in cooking.

    From watching your videos, I went to the market and purchased a bottle of roucou and now I put it in EVERYTHING! I’m also enouraging my friends and family to use it! Your content is very inspiring and makes me appreciate our local cuisine and want to learn more about it. I also appreciate how chill you are and you don’t put on that false accent that many do. The authentic food and vibes are much appreciated!

    I love using this in my stew pork, chicken, pelau, ochro rice and I use this to stew my fish. My dad makes it as we have a tree in our yard

    Wow this was actually interesting. I've seen this in my neighborhood in India but I had no idea that it could be used in so many different ways. Looking forward to using it as a dye, if not for direct consumption.

    I call it Annatto in Cuban cooking. Great for cooking in oil then adding your rice, beans, olives and pimientas. Then add water.

    Annato also contains a different version of vitamin e called toccotrienol its many times more anti inflammatory than the tocopherol version usually found in nuts or supplements

    Yup, that is what gives Golden Ray its unique color and flavor. It's healthier and maybe tastier to just use this and real butter in your cuisine. Thanx for the video and method Dawi!

    I remember my mom making this my grand mother had a big tree we always make it out side when i go back to trinidad on vaction i. Always bring back some i use to put it on as nail plolish when i was a kid

    Had not realised that annatto had originally come from the Caribbean. , I had always thought that it originally came from the Philippines and was carried to the Windies by the Spaniards. I got that totally the wrong way around. ;-)

      I don't think the liquid is available but you can try for the seeds. You can also make annatto oil using the seeds.

      I planted a tree years ago , My grandparents come from that tradition , it alzo preserves the food, that is why it was so widely used as people had no refrigerators , I cook with it all the time, I add tumeric when I am doing fish,
