What I love about you as a baker is you want your desserts to taste as much like the real thing as possible. Authentic taste is super important to me, too. (PS I am a chocoholic, too, but for spring, anything strawberry is my favorite.)

My mother-in-law was an excellent cook. She often made this dessert and would change up the flavors, lemon or chocolate or even butterscotch pudding layer. How would you make butterscotch pudding? Could using the little packets of "True Lemon" (crystallized lemon juice) help lower carb count? 🤔 or, maybe it would be just the same. I often use powdered lemon juice because I don't have fresh lemons on hand. I add it to hot tea, or to Greek yogurt, or keto cheesecake, etc.
I use it for stuff too but it is the same as lemon juice just dehydrated so I think you would need to mix it with the same amount of water. You could use less but then it just wouldn't be as punchy of a lemon flavor.
You probably could it just may be a little drier of a recipe. You can use my old shortbread recipe in my lemon bar video. There is no whey protein in that recipe.
i made a similar recipe to this, using CJ's keto kitchen recipe. But I think i used your graham cracker recipe for the crust. I remember it being really good! i think there's actually still some in the freezer. I tend to make a dessert, get tired of it in a couple days, and then freeze it because these ingredients are toooo expensive to throw out lol
regarding carb count, I've noticed almost every brand of heavy whipping cream (even dairy pure and Land o Lakes) have started adding fillers that pushed the carb count to 1g per tbsp. Before, most HWC was 7-8 grams of carbs per cup (0 per tbsp). Labels are allowed to be off by under .5g. So now that each tbsp serving is 1g (possibly closer to 1.5), that makes each cup of HWC between 16-20g carbs, effectively doubling it. So far, the only brand i can find which doesn't currently list 1g/ tbsp is from Lidl. Cream cheese is the same way. Servings have gone from
The Wellesley farms from bjs still says 0 carbs but yes companies are adding all sorts of crap to pad thier pockets, very annoying. Yes I always by Philadelphia also bummer that so many other companies have to add other crap.

I had trouble last week, making a very similar recipe. It turned out metallic tasting. I used an aluminum pan unlined for the shortbread. But it was the lemon curd that tasted metal. I cooked it in a glass bowl over water. Wire whisked. Any suggestions?
Hmm I looked it up couldn't find much except for using metal, one mentioned even a mesh strainer could do it. I feel like old lemon juice or all bottled can kind of taste off as well. One site mentioned the eggs could give a sulfer taste. Not sure what else it could be if it's none of those though.
