⬇️⬇️English recipe follows⬇️⬇️ 鮮淮山薏米豆腐魚湯 材料: 紅衫魚(大)4條 鮮淮山1支 熟薏米半碗 豆腐1磚 處理: 1. 紅衫魚,刮淨魚鱗,去除內臟,清水洗乾淨,擎乾水。 2. 鮮淮山,清水洗乾淨表面泥污,戴上透明膠手套,用生果刀輕手刨去皮,清水洗乾淨,切細舊。 3. 豆腐,清水洗乾淨,切細舊。 烹調: 1. 大火在鑊中燒熱油1湯匙。 2. 放魚落鑊,轉中慢火繼續煎。 3. 魚的一面已煎至金黃色,反轉另一面繼續煎。 4. 魚的兩面已煎至金黃色,轉大火,灒入滾水1升半,轉中慢火,滾10分鐘。 5. 另一邊,預先放熟薏米、鮮淮山及豆腐粒在煲內,魚湯過濾至煲內,轉大火煲滾。 6. 湯已滾起,轉慢火,留一條縫隙,煲15分鐘。 7. 鮮淮山及熟薏米已煲腍。 8. 完成,可享用。 Tofu fish soup with fresh yam and cooked barley Ingredients: Golden threadfin bream (large) 4 Nos. Fresh yam 1 log Cooked barley half bowl Tofu 1 cube Preparation: 1. Golden threadfin bream, get it scaled. Remove intestines. Rinse thoroughly. Drain. 2. Fresh yam, rinse its surface thoroughly. Wear a pair of transparent gloves, peel it lightly with a fruit knife. Rinse thoroughly. Cut in small pieces. 3. Tofu, rinse with tap water. Dice in small cubes. Steps: 1. Heat up oil 1 tbsp at high flame in wok. 2. Put fish in wok. Turn to medium~low flame and continue frying. 3. One side of fish has been fried into golden yellow, flip over and continue frying. 4. Both sides of fish have been fried into golden yellow, turn to high flame. Put water 1.5L into the fish. Turn to medium~low flame, cook for 10 minutes. 5. On the other side, put cooked barley, fresh yam and tofu cubes in pot in advance. Filter the fish soup into the pot. Heat up at high flame. 6. Soup boils up, turn to low flame. Leave a gap between the pot and its lid. Cook for 15 minutes. 7. Fresh yam and cooked barley have been softly cooked. 8. Complete. Serve.
