My family growing up never used MSG in coming so i never learned how to. My son got interested in Japanese and Korean cuisine and we started using it. It has never negotiable affected is so I have started using it in western cuisine. It really adds a fullness that is delicious!
I'm a Chinese and 99% of the time, I'm fine eating food with MSG, but I did encountered 3 times of Chinese Restaurant Syndrome during my 3 decade lifetime, caused by soup that heavily seasoned by MSG. So moderation is key.

It does not have less sodium than the table salt. Just that the amount of quantity that you need to flavour the food is well lesser than salt. And hence the total amount of sodium in the final food is lower

People with nervous system imbalances or those who are taking medicines for depression should definitely be careful with their total intake of MSG. While glutamate occurs naturally in the body, supplementing food with it artificially raises its levels, sometimes beyond which might be healthy for some people. Just like some people should not take too much salt for their health, others may need to restrict MSG. People should not be shamed if they prefer to not have their food supplemented with MSG-- they may have valid reasons for it, and it should not be necessary to explain your health problems to people when all you want to do is eat out sometimes.
But that should not be the whole reason that could inflict to another person. I understand if it's a medical condition, but for those who don't have one and at the same time spreading hysteria about msg is the problem, using it as a movement and forcing other people to believe it's "poison" is just racism at that point.
I can say with 100% certainty that in at least some people MSG does cause heart palpitations. It may be rare and sometimes need an elevated dose but it 100% does cause issues for some. Someone I knew very closely, was found to be sensitive to MSG and after doing extensive EKGs and heart test found the culprit dam was the extra MSG added. They could trigger heart palpitations on que after consuming MSG. It may be rare but it does happen Just like anything there's a subset of people who don't tolerate.

Skipping Chinese restaurants will not help you if you have an actual MSG allergy. You would actually have to stop eating a lot of food no matter what their national origin is. Most meats, certain types of cheeses, definitely seafood, corn, potatoes, mushrooms, etc... There's a lot of food that contain MSG. Avoiding one culture's cuisine does nada.

I know someone who gets bad migraines after eating msg. Not just chinese food, yes no chips that have it, no fried chicken and many chain restaurants that are not Asian use msg. So constantly reading labels, checking websites for allergen information. Just like some people who have peanut allergies one would not tell them to just eat some. Same for artificial sweeteners, I can't always detect it in flavor, but depending on how much it is used I can tell probably in 80% of food that have it as I get bad stomach pains after about 30 minutes. So if someone wants to avoid MSG or anything else they have a valid reason. No one should be shamed because they ask about whats in food.
I've been eating MSG all my life and I'm almost 50 now. But in My early 40s after I start getting in shape I no longer can tolerate MSG and I have tested this for over 10 years. So for me I avoid MSG at all costs and stop eating food that contain MSG and I'm so much better. This includes my favorite restaurants. I will just eat around it

Because of Ajinomoto, my two brothers had to have their appendix removed. They eat the foods in which Ajinomoto was used every day because those foods taste amazing. As a result, both of them had to have appendix surgery. I feel uncomfortable when someone is going to remove organs from my body 🥺

I’m Chinese and Korean. I can’t eat at certain restaurants because the same effect happen after eating. Extreme drowsiness, followed by heart palpitations. When I eat certain broth boullion same thing. I don’t eat fast food. If it’s not the msg by itself, it may be in combination with other chemicals like many things in this world. MSG is “fed” or dosed to mice in labs to create “fat models” or obese mice for diabetic models. There are plenty of research papers on it… but the average person either doesn’t understand the papers… or don’t want to do the research themselves. MSG is a migraine trigger for me. I can have it in small amounts, but large amounts is horribly painful for me. My main problem is when they circumvent labeling by saying “yeast extract” “natural flavoring” or one of the many other names they use to hide it in food. Full ingredient transparency needs to be practiced when it is something you are ingesting.

it's just a tiny bit salty. Saltiness comes from sodium ions and MSG has less sodium per weight compared to regular salt. So, if you wanna use it like salt, make about 4:1 (adjust proportions to taste, sometimes even 1:1 could work) mix of salt and MSG and use that

Today's MSG is not the same as the original which is derived from seaweed. Naturally occurring glutamic acid (glutamate) in foods is “bound” to other amino acids or proteins. MSG is a synthetic reproduction of this natural glutamate. It is chemically produced and not bound. That information is omitted in this video. MSG in food actually makes me physically ill....nausea...vomiting..to the point that I have ended up in the hospital...I won't eat anything that has this additive....my internist discovered this was the cause cuz I would get sick after eating Chinese food.,.I always ask if this is in any food I order....lesson learned the hard way!
From a biological standpoint, it's definitely possible to have a negative feeling when ingesting msg or any other synthetic flavor (ie. sucralose) the flavor triggers a biological reaction for digestion in the case of sweetener the body could produce insulin in preparation for the sugars but if there aren't any sugars being ingested the excess insulin could cause a server drop in your blood sugar, so with msg your body is expecting proteins and produced different hormones, so if your eating msg without enough protein in your food it's very possible for it to have a negative effect... Just be educated. Don't just rely on a you tube video.

In my case some msg brands are safe for me to eat, and some cause me itches & allergies. So far Ajinomoto brand's msg is safe for me; never had an issue with it

Interesting. My dad worked in R&D for Maggi (I even named the teddy bear they sent me when I was in the hospital Maggi) . Yes, the same Maggi that makes bouillon cubes and liquid gravy maker (MSG). It's been a long time since I've seen the packaging so I've forgotten what the liquid is called. Aside from the migraines it can give some people, I thought the problem was sodium and how people were cutting back on it. I was surprised to see how widely available the liquid still is around the world. By the way, if you check most menus, you'll notice that most Chinese restaurants do not use MSG in their cooking.

My mom tried to say we were allergic to it as kids but as an adult I don’t have an issue with it, nobody else I know claims to have a problem with it either so I don’t think MSG is outwardly causing these symptoms for people unless it’s maybe placebo

That’s what I have to do. But I think it tastes better anyway when you when you cut vegetables fresh and you leave out the veggies you don’t like.

Americans love msg. Got to costco business and they sell the accent brand of msg used in many is restaurants for soups. Parmesan cheese is loaded with msg which is why Americans love it. It’s loaded into Doritos and snacks to as it enhances low flavors making cheap chips tasted great. Glutamic acid is sprayed on apples as a preservative. Basically an aversion to Chinese msg is just racism as very little is added. It’s no where near the msg used in American fast foods, chips, soups, and parmasan cheese. Yet they only single out Chinese msg. Sounds based not on science but racism.

MSG is “fed” or dosed to mice in labs to create “fat models” or obese mice for diabetic models. There are plenty of research papers on it… but the average person either doesn’t understand the papers… or don’t want to do the research themselves. MSG is a migraine trigger for me. I can have it in small amounts, but large amounts is horribly painful for me. My main problem is when they circumvent labeling by saying “yeast extract” “natural flavoring” or one of the many other names they use to hide it in food. Full ingredient transparency needs to be practiced when it is something you are ingesting.
And in summary, too much of anything is unhealthy.
To further elaborate: the action done to completely neglect overall health that would make you severely sick.

it's just a tiny bit salty. Saltiness comes from sodium ions and MSG has less sodium per weight compared to regular salt. So, if you wanna use it like salt, make about 4:1 (adjust proportions to taste, sometimes even 1:1 could work) mix of salt and MSG and use that

I can tell when I have eaten a product containing MSG. My heart starts racing. As long as I read labels and avoid anything with MSG, I don’t have a problem.

Asians eat MSG in nearly every savory dish across virtually every asian country from Laos to Japan and they're living longer than we do by a considerable margin. Not saying MSG is making them love longer, just saying it probably isn't making them unhealthier.

Today's MSG is not the same as the original which is derived from seaweed. Naturally occurring glutamic acid (glutamate) in foods is “bound” to other amino acids or proteins. MSG is a synthetic reproduction of this natural glutamate. It is chemically produced and not bound.
That information is omitted in this video. Instead, MSG is compared to the natural glutamate in our body, tomatoes, cheese, meats or seaweed.

MSG in food actually makes me physically ill....nausea...vomiting..to the point that I have ended up in the hospital...I won't eat anything that has this additive....my internist discovered this was the cause cuz I would get sick after eating Chinese food.,.I always ask if this is in any food I order....lesson learned the hard way!

Life expectancy in Japan is one of the longest in the world. I think that's a pretty good sign that MSG is okay.
From a biological standpoint, it's definitely possible to have a negative feeling when ingesting msg or any other synthetic flavor (ie. sucralose) the flavor triggers a biological reaction for digestion in the case of sweetener the body could produce insulin in preparation for the sugars but if there aren't any sugars being ingested the excess insulin could cause a server drop in your blood sugar, so with msg your body is expecting proteins and produced different hormones, so if your eating msg without enough protein in your food it's very possible for it to have a negative effect... Just be educated. Don't just rely on a you tube video.
It's the same as salt. Sodium chloride is essential to life but overdose of it is harmful to health especially to the blood pressure. MSG is the same it contains Sodium, according to health research Sodium in MSG is more harmful than in salt. The problem is not it's safe or not, but it's how much we take.

I’ve heard Chinese food syndrome was actually caused by substandard oil or spoiled ingredients used at the time. Now that food safety laws are more strict youre much less likely to get the “syndrome”
I dunno man I didn’t know accent was MSG but I noticed every time I used it it made my food taste better but made me sick and made my legs and feet go numb and tingly. I found out it was MSG after I stopped using it.

In my case some msg brands are safe for me to eat, and some cause me itches & allergies. So far Ajinomoto brand's msg is safe for me; never had an issue with it

Interesting. My dad worked in R&D for Maggi (I even named the teddy bear they sent me when I was in the hospital Maggi) . Yes, the same Maggi that makes bouillon cubes and liquid gravy maker (MSG). It's been a long time since I've seen the packaging so I've forgotten what the liquid is called. Aside from the migraines it can give some people, I thought the problem was sodium and how people were cutting back on it. I was surprised to see how widely available the liquid still is around the world. By the way, if you check most menus, you'll notice that most Chinese restaurants do not use MSG in their cooking.
most of the restaurant sauces are mixed ingredient, and some of it guaranteed to contains MSG... although daily use of MSG is can be considered "safe", it also applied to general eating rule : don't consume anything excessively

My mom tried to say we were allergic to it as kids but as an adult I don’t have an issue with it, nobody else I know claims to have a problem with it either so I don’t think MSG is outwardly causing these symptoms for people unless it’s maybe placebo
