    We Indonesians cook the same flan by using both sweetened condensed milk and evaporated milk, and instead by bain Marie we steam it

      Use 1 tablespoon of Ghee in the mix. It will smoothen out the whites.

    Note: In Malaysia, the recipe is almost the same. The difference is that we don't strain the mixture. Instead, we purposely want the bubbles since it holds the caramel better.

      Huh, thats actually how my aunt makes her flan. I personally like the strained better because of the silky smooth texture but i also like the unstrained one because of the very reason you just stated. Never knew its from malaysia tho.

      ​@@mamh18 Venezuelan with Colombian family here. I think there are only 2 quesillos, the baine Marie/steamed one, and the baked one. I like the steamed ones for silkiness, but the baked ones have a richer flavor (which is how some Colombians do it). I think we should make a flan/quesillo recipe book where we state each flans points like superhero cards 😂 amount of holes, tastiness, etc

      ​@@FuckedUp84 The whole point of Spanish colonialism was to spread Spanish culture (and Catholicism) across the world. It's not like the Philippines appropriated it from the Spanish--they quite literally forced it upon the Pinoy. However subtle the differences are between Filipino flan from Spanish flan, they are still present which makes Filipino flan distinctly Filipino, the same way Latino versions of flan are distinct to their respective cultures as well.

    As a filipino we also have different version now of flan you should try mango flan and cassava flan.

      ​​@@freyjablue. as some one who is brazilian I can tell you we make flan all the time and it never turned out to be much of a problem, so yeah I would recommend you to try out! Maybe start out with smaller sized ones so they cook all the way through, then build your way up to a big one

    As a Filipino. We in our family use egg whites too when making leche flan. You just have to adjust the cooking process and some ingredients. We don't want to waste the egg whites. Hehehe

    ngl i honestly enjoy the bubbles in my flan, i feel like when there aren't any bubbles it feels too dense while chewing and i have a hard time with it sticking to my mouth so i enjoy how the bubbles make it feel lighter so i can eat more of it ❤

    Man the nostalgia strikes again. Back then whem my mom wasnt busy as now and i was a single child she would always cook tons leche flan and i always enjoy the part where it just kinda melts in your mouth. But now since i have 2 siblings (supposedly 3) shes been more busy to support the family with my dad. But of every now and then she still cooks but still hits better back then.

    He literally said in the beginning that Leche flan in only a variety of flan, not the "original" one. You guys need to watch the video again before saying "ooh izza hablas Espanol", "oui zee mouin corte Là Francois", "esta Portuguese" or whatever jeez.
    Many countries, especially those previously influenced/colonized by Spain and Portugal have flans because they brought it there. Natives then made their own variation, like in the Philippines where they only use the yolk, use llanera for container and cooking vessel, canned milk due to US influence, and more.

    Recently I tried an El Salvadorian "corn bread flan," that was FANTASTIC! Same basic flan recipe, but then added cornmeal & fresh corn kernels -- all blended until smooth -- and baked. No carmelized sugar, instead I poured some homemade strawberry & blueberry sauce & topped with whipped cream. Mmm... 😋👌

    Our version of leche flan in Venezuela is called "quesillo" we used the same ingredients and the holes are a sign of great cooking skills. We even have a version mede with coconut and it is Good 😋😋 🥥🌴🥥🌴😋😋

    Some of y'all need to calm down. Sure, it may not be Filipino only, but we grew up eating leche flan. It became ingrained with not just our childhood but also our culture.
    If you're going to educate someone, at least do it in a calm manner.

    Air bubbles create a great texture in my opinion. It takes the air and uses that unused volume to create denser areas in certain points. The best flan I’ve ever had I was 6 and it had those air bubbles. To die for.

    in france flan is made from a mix of eggs, milk, cornstarch and vanilla extract that is then poured on a shortcut pastry (so it's basically like a pie ig) and cooked in the oven. it's delicious!

    Spanish bring leche flan in the Philippines. They built a lot of church in the Philippines during their colonization and they're only using egg whites as cement so for yolks not be wasted they teach Filipinos how to make this.

      I tried that ube condensed milk - on paper it should work but it was just way too rich and way too sweet (even for condensed milk). I suggest testing it on one small flan mixture first.

    My mom taught me a recipe similar to this. She’s from Mexico and am very happy to have been taught it. The only thing different is she adds a whole block of cream cheese and doesn’t use a water bath. I never thought about straining it or using solely the egg yolks. I wonder if it’ll come out the same? I’ll have to try one day

    This looks so much better than the Mexian one imo just bc I don’t like gelatin. Every mexian flan or even Japanese pudding has gelatin and I hate the plasticy taste and weird af texture but this looks like cheesecake texture :0

      I think what u've tasted had the egg whites mixed with egg yolks. I remember playing around between Leche flans with both egg whites n yolk and Leche flans with just the egg yolk. The flan with the egg whites n yolk gave me the gelatin feeling while the flan with just the egg yolk gave me the creamy feeling (in ur case, the cheesecake texture). I've tried making Leche flan with just egg whites, but... it didn't turn out so well 😅 Some ppl prefer the whole egg version of the flan bc u can make more flans and less tedious to separate the yolk.

Also, the only reason you have it in the first place is that Mexico City ruled the philipines which was part of the East Indies for the Spanish Crown. We know the original recipe and also are the first ones to put vanilla since it is native to Mexico.

    In Brazil, this dessert is normally called pudim, which is funny, cuz pudim when translated becomes pudding, not flan!

      Pudim is much looser in texture. I make this version of flan for my Brazilian husband, but the pudim in brazil hás egg white in it so it is not as creamy and thick. It has more jiggle and looseness to it. You should try this one, I prefer it and so does my husband.

    In Pakistan we call it pudding, only use 4 ingredients, sugar, fresh milk, eggs and vanilla extract. We steam it on stove top too!

    A girl I worked with made flan for everyone once. I wasn't there that day but she came in the next day and brought me some. Everyone else had left theirs at work on the counter, and I was so mad they wasted such deliciousness. Flan is amazing 😩

    Thank you for cooking it the right way! It disgusts me how some Filipinos use egg whites in making leche flan lol. The traditional ingredients are only egg yolk, condensed milk, evaporated milk, vanilla, and sugar.       ​​@@user-wq9mw2xz3j historically, the filipino leche flan was made because the spanish colonizers only uses the egg whites as construction material (adhesive) for the churches and government offices they built. They taught Filipinos to make flan and other deserts that uses the yolks. Nowadays, we Filipinos do find ways to utilize the unused egg whites. We make it to mayonnaise or simply put salt and pepper before frying it like a regular sunny side up, then use it as filler for sandwiches together with other left over savory meat based foods.

      is my point. But even if whole egg works in most recipes, using only egg white doesn't turn out as good. And even for sandwich etc. I much rather have whole egg, than only white in order to use yolks only for recipes such as this where whole egg works as well

    Ooooh egg yolks instead of the whole egg sounds good!! I’m Puerto Rican and make it with a block of cream cheese (flan de queso). I’m gonna test it out with egg yolks instead of whole eggs! I also use vanilla bean paste instead of vanilla extract and it comes out SOOOOOO good!
