我每次做煮10分钟五花肉,喼多D密D窿,然后放鸡粉,13香,盐,五香粉,沙姜粉,酒,胡椒粉,蚝油,搅拌均匀,然后擦均勻啲腌料,在擦三次白醋,放雪柜一晚,第二天用一个蛋白加D盐,搅拌均匀,擦猪皮上面,烤30分钟,然后拿掉猪皮上面的蛋白盐,放在烤架上烤多15分钟,这样烤出来的猪皮有D咸香味。我每次买3斤五花肉做烧肉。
你和我的做法大同小異,只是醃料有多少分別,不過每個人的口味都唔同,按照自己的喜好去調教就可以啦!

抱歉我不懂,這些是專門做燒臘店的師傅才學得到的秘密,不易外傳,在英國倫敦都可以食到,不過味道不及香港師傅,現在世界各地的中國餐館,大部分都是中國外省人做廚師,香港廚師大部分都年紀大了,退休了!

其實很簡單,到藥材店舖買囪水料煮熱後,當然還需要加入醬油及生抽作調味,才將紅腸放下煮熟即可。

又是我上次追了烧鸭回复7次,只是这个都是失败不脆皮,四次做过失败,是不是排骨炉挂炉温度不同家里平放炉烧出不一样吗,挂上肉盐我只能图上一点,没有你平放这多.未找到原因,比烧鸭难多了,请指教
我平常都用家用焗爐的,所以只有這方面的經驗,主要成功的關鍵是豬皮要乾硬,放一層鹽在上面去燒第一次,令豬皮首次受熱,然後第二次加熱就令豬皮爆皮!溫度是一定要留意,祝你成功👍

师傅 烤肉时猪皮会起打泡是什么原因 请指教
從前師傅教落,豬皮要香脆,一定要打孔,而且要由皮打至肥肉的部份,烤肉的時候皮下油脂才可以釋出到表皮,再利用這些豬油去令豬皮溫度升高,到時豬皮就會打泡,有氣泡就會脆,所以一定要盡量打多一點孔。有時快要烤完的時候,有一小面積豬皮沒有起泡,還可以再打一次孔,都可以作為最後補救一下!

I can see you have a Philips airfryer on your countertop, why didn't you use it ?If the pork belly is too big, then cut it in half before you place it in the airfryer
Some people don't have an airfryer, so this video uses an oven,So many people can follow me to cook with it.

The airfryer cook food is very fast !
