I think Kraken = Large Scary "Sea Monster". Surely started as one thing, but became a catch-all term for all of the Giant Sea Creatures that were encountered: Giant Squid, Colossal Squid, Whales, Ore Fish, Shark, etc... I do believe Giant & Colossal Squid did attack ships. Possibly they are more intelligent that we give them credit for, and collectively learned not to attack ships after being attacked back and injured. The sailors described them long before we had evidence of them. They were talking about giant arms coming out of the water attacking their ships before Giant/Colossal Squid had been documented.

Also the 6m long fish mentoined in the documentary sounds very much like a Ore Fish presumably a dead one if birds rested on it.
Most likely dead or dying squid just grasping for something, washing ashore.
Seeing the tentacles and beliving that they got attacked sounds right.
It is also worthwhile to remember that seafarers often were heavy drinkers.

We have seen whales with massive latch marks from giant ish squid so its definatly a real possibility that the kracken was mabe 80% a factual animal.
