- You won't be able to get enough of these delicious Chocolate Chip Banana Muffins! My secret ingredient takes these banana chocolate chip muffins to the next scrumptious level 😋

CHOCOLATE CHIP BANANA MUFFINS
3 medium ripe bananas
1 1/2 Cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
2/3 Cup granulated sugar
1 tsp instand espresso powder
1/3 Cup unsalted butter (melted)
1 room temperature egg
1 tsp vanilla
1 Cup chocolate chips
Mix dry ingredients in a bowl then set aside. In a large mixing bowl, mash bananas then add egg, vanilla, and melted butter. Gently fold in dry ingredients until almost combined. Add chocolate chips and fold together. Don't over mix. Fill 12 muffin cups with batter. Bake in a pre-heated 375 degree oven for 18-22 minutes. Cool on a wire rack.

I’ll have to try this. I just recently learned to make banana syrup from banana peels. I think I’ll add a couple of tablespoons of it to the batter. Intensify the banana flavor.

My sister and I made this recipe. We did substitute cinnamon for the espresso powder (since I am susceptible to caffeine headaches) but my brother-in-law said he could eat the whole pan of muffins warm from the oven so def a success!

I've had no luck with powdered products so I'd brew a strong coffee concentrate instead. Whether it's tea, soup, coffee, espresso, gravy mixes, etc.... those instant versions don't pass the taste test with me. I can detect off flavors that indicate chemical enhancement and/or processing. I wonder if light brown sugar would result in a choc chip 🍪 tasting muffin.... Muffins are my breakfast every day. Good stuff !

Just made them, yummy! They didn’t rise as much as yours, I used baking powder, not sure if bicarbonate of soda is what I should of used ( here in UK) Hubby loved them. Pity my girls are all coeliac or wheat free, I will maybe freeze some or else I will eat them all!

Renee, sometime when you're making banana muffins add blueberries instead of chocolate chips. They are to die for. If you'll like blueberries, you will love them.. Trust me.
That’s what I used to do, too, because I’m not crazy about chocolate chips and had a family member who couldn’t eat chocolate. I’d make the batter and do half with chocolate chips (didn’t think about the espresso powder!) and the other half with blueberries. The blueberry goes well with the banana and makes a little more special to those who can’t have the chips. I’m going to have to make these for a friend!

Renee, I made your brussel sprout recipe. Mine stuck to the pan. I notice your pan is not perfectly flat but has grooves? which seem to make it easier to keep cooked items from sticking. Would u share where u purchased that sheet pan? Thanx.
I got the pans at Walmart....not sure of the brand name. Next time, perhaps put a dab of olive oil on the pan first. This should stop the brussels from sticking

FYI anyone following this recipe if you use salted butter then don’t add the salt and if use unsalted butter then add the salt 😊
I've never seen expresso powder in the grocery store. What section? We have a Harris-Teeter, owned by Kroger.
Look in the baking section with chocolate chips, powdered milk, etc
If you only have two bananas should you adjust the amount of flour?
If they are a decent size banana....I would not adjust the recipe. Should come out just fine :)

The amount of banana bread I make when our banana plants give us bananas is obscene. I even give bananas away to our surrounding neighbors because we have so many and I can only eat so many banana recipes before I'm tired of bananas.
That said, we haven't had any bananas since last summer and I'm ready for more so I've been watching my banana trees patiently in the back eager to see a flag leaf and flower pop out!
I sure will try that espresso powder trick next time I make a chocolate banana recipe.
