  • Let's can spaghetti sauce! This spaghetti sauce recipe is perfect for everyone... not spicy and easy to please everyone in your house!
    Canning Homemade Spaghetti Sauce with Meat
    30 lbs tomatoes
    2-1/2 lbs ground beef or sausage
    5 cloves garlic, minced
    1 cup chopped onions
    1 cup chopped celery or green peppers
    1 lb fresh mushrooms, sliced (optional)
    4-1/2 tsp salt
    2 tbsp oregano
    4 tbsp minced parsley
    2 tsp black pepper
    1/4 cup brown sugar
    Yield: About 9 pints

    Question: How is the Ratio of meat and spices, in that large tomato quantity? Does it seem you "need to add"?
    I would say it's a Typo of Publisher? But there is 2.5lbs of meat....
    Thus why im asking about Ratio of spices. Was the meat hard to find, amongst the tomato sauce?
    For me? I blanch tomatoes to remove the peals. Seeds are fine, in my opinion. IF i wanted an Homemade Italian Style Sauce? I would run it threw a Food Grinder? Those metal Grinders that put Juice out one side and peals/Seeds out the end. Used for Passata and Tomato Juice. Lol
    When i first started canning 45 YEARS ago? I left peals on for tomatoes. I was SO disappointed! I found the curls of peal "ruined it" for me! Not the taste, just the visual. Every jar i used, reminded me how disappointed i was! Lol To me? Home Canned Food IS a *Jar of Joy and Love*!! But the stupid peals Removed my.Joy! So i have ensured ALL peals are Removed, ever since.
    I see now? Others keeping peals, dehydrating them, to powder up for Adding into Soup? That IS a splendid idea! I highly agree with Finding Ways to Use "waste"!! I also watched a lady Use ALL the peals and pith from lemons, to make Pectin! "Where has she been all my life?"!!!! LOL And she told how much this Pectin to Use, to Replace the Dried boxes! Awesome!

      Yes, I do find that I prefer to add spices and whatever else to the sauce. The amount of tomato is excessive 😅 maybe someday I will try a food mill. I have to be honest… the thought has crossed my mind.
      I love when we can keep the discard and not waste!! 💜💜💜

      I figured as much! With that much tomatoes, the meat needs to be increased and spices.
      And I always make my spaghetti sauce without lots of meat! LOL
      But I am thinking of making a batch to can.

    The 30 lbs is the assumption that you'll reduce it to a thick sauce consistency.

      Yes, that would have been much better although the instructions in the book do not indicate to do so. It says to simmer for 10 minutes . I think it would have turned out better if I had used a paste tomato also.
