    FYI lang po.. This is a Bikolano dish called Adobo sa asin.. we learned Adobo from the spaniards.. when you say adobo, it originally means that the meat is cooked in its own marinade.. Our ancestors (Bicolano) invented this cuisine out of necessity.. Back then walang means to preserve food ang mga tao so what they did was to marinade the meat with the ingredients you saw in the video.. vinegar is sometimes added depende sa lugar and preference.. after cooking, the adobo sa asin was stored in jars with the oil.. after it cools down the lard forms a protective layer keeping the oxygen out thus preserving the food.. saamin, what my lola used to do was to dip boiled casava in the salty oil of the adobo and eat it.. thats one way of eating it.. again this method of eating was born out of necessity because of the scarcity of food like rice in the mountains noong unang panahon especially during the different wars we experienced.. Pritong baboy is different because you do not cook the baboy in its own marinade and in its own oil..

      With all due respect sir, saan pwd i-check ang credibility na mga Bicolano naka-imbento ng Adobo sa asin? Dahil meron din akong kwento from my Lolo, na ikinuwento din nman ng kanyang mga ninuno na nuon ay may Karinderia sila dito sa Pampanga (Mabalacat) at yung style ng pagkakaluto ng Adobo sa Asin sa video na ito ay isang simpleng Pritong Baboy lang sa amin kung tawagin. at karamihan ng mga parokyano nila nuon ay mga Bisaya, Bicolano (baka isa dito mga ninuno mo), Ilokano dito malapit sa Clark.... anyway, I love Bicol, lalo na ung pinangat, percules, laing, at siempre, ang sikat na Bicol Express... Mabuhay ang mga Uragon! :) God bless...

      @@jupiterdzhoovy558 Marinade po sir.. I was talking about the sauce in which the pork is soaked in before cooking... Marinate is a verb.. the act of putting the pork in the marinade.. Thus what i used was marinade.. "the meat is cooked in its own marinade"

      Im sorry but no...pilipino was already been eaten adobo in the philippines before spaniards arrive,they just gave the name because it resimbles on thier.adobo which means mix spices and marinated ..it is in the history that whay we so called adobo now is originated in the philippines..

      I'm from bicol pero what we do is to put it the jar with pork oil. It last weeks. Mas masarap lalo Na kapag tulog na Ang mantika. It's a traditional way of preserving food we learned from our ancestors.

    this is what adobo is in Cebu. No marinade; just salt and garlic. Whatever you call it in your region, may it have originated there or not, it sure is delicious, and a great representation of Filipino cuisine❤️🇵🇭

    In ILOKANO, we make Adobo like this... Pork, water, salt, (ginger and laurel are optional), cook until meat becoming golden brown then add garlic sauté, add pepper and last...the Ilokano Vinegar from sugarcane to make more tasty😍

      this is adobo sa asin, a bicolano version of adobo. we cook it with just these ingredients so it could last for a
      quite some time. we put it in a jar with its own oil and it takes i think weeks to expire

    This is how i do it kapag magpi- PRITO ng baboy. Walang nagturo or nagsabi basta gut feeling ko lang na dapat lagyan ng tubig para maging soft yung baboy. Ngayon ko lang nalaman adobo sa asin pala hahahaha dito sa cebu ang tawag diyan is ADOBO lang. Pero sa mindanao tawag namin pritong baboy lang.

    Baka nga kase adobo sa kanila yan bakit marunong pa kayo sa kanya. Ang tawag sa amin nyan naman sa quezon prov ay Sinangkutsa / Tinusta nilalagyan pa nga yan ng tatay ko ng pinitpit na salay. Magkakaiba tayo ng tawag sa ibat ibang lugar. Kung hindi adobo sa inyo e di hindi.
