We don't fry the meat.We just let it simmer and fry it in its own oil, till it becomes chewy and tender with the skin a little bit crispy.We call that Adobong Tuyo, where we put in a jar keep it for days, with its own oil,and heat it when we need to eat.

After being cooked by the vinegar, place it in the freezer for 30 mins before frying. Oil must be very hot but not burnt then fry. While frying, take it out from the heat and splash meat with water to make skin and parts crunchy then back to the heat. Thats how we do it in Cebu and Mindanao. Happy cooking.

Ito yung adobo na kinalakihan ko sa Cebu lalo na during fiesta. Although we don't add oil dahil lulutuin lang namin siya sa sariling mantika pero may ibat ibang version naman. By the way sa amin Adobo is not only a dish but a way of cooking to preserve the pork dahil sa probinsya wala kami ref at ilalagay namin yan sa kitchen cabinet para in the future days gagamitin namin yan pansahog sa pancit or to create another dish. Normally pagka luto ng adobo hindi namin yan derecho e seserve sa table lalo na pag fiesta dahil ubos talaga yan agad sa sarap, diyan kami kukuha pang humba namin at yung humba na ang sineserve sa table pag may fiesta. Hey! Thanks for sharing. Try ko nga Ito. Madami nga style ng adobo, some are just vinegar, some add coconut oil, some boil/stew, some fry-stew-fry, some pinatuyo/nagmamantika. One thing na napansin ko that makes all of them "adobo" is garlic with soy sauce OR vinegar plus method of double cooking the meat: simmered stew and frying. Hindi ako food expert. Home cook lang. But napansin ko Lang Ito. :) Okay be wrong. Someone else can give me additional pointers. Food is to be enjoyed and creativity in preparing food is diverse. I am just an adventurous home cook and eater.

totoo para mag crispy ang balat nang baboy dapat sprinkle water. Pero now a days nilagyan nila nang harina or corn starch para mag crispy.
