Looks delicious! Suggestion though, try salting the bean sprouts and let then stand for a few minutes then squeeze them and then rinse them to remove excess salt, you can get more water out and a bit easier that way.

💖 Chef Rudy Lieu of Fortune Express' egg foo young sandwich titled "St. Paul Sandwich." (Chinese Omlete)
10 Shrimp, 6 Eggs, 1 tsp, chicken bouillon, 1 Tbsp ginger garlic paste, 2 tsp soy sauce, 2 Tbsp cornstarch, chopped scallions and diced onion cooked in oil in Wok for 5 minutes while braise top of egg mixture with oil. Flip on plate and allow a couple of egg too young to cool. Cutt in half and fold each one for clam shape and place on toasted bread topped with ketchup-mayo, pickles, tomatoes, lettuce.
