Those clamps with all the peg holes that you used a wedge to exert the clamping force might be the most ingenious thing I've ever seen on TH-cam, right after I finish this video I'm going to the garage to go build a couple pairs of those

I'm a layman when it comes to working with wood, I only know it from my grandfather, who was a carpenter, and my dad (who was an architect and used wood to do a lot of construction). I have similar stools, but they have crossbars in the middle of the legs. Thanks to this, you can place one on top of the other and have such a taller stool. This method is often used in the kitchen.
I hope to one day have the skill (and tools) to do something as elegant as this and call it “simple.”

I would skip the glue on the cross braces and leave a gap. It could push the top off if it gets a bit of moisture. But it probably doesn't matter, it is a fast and relatively cheap build.
