My dad used to have salt fish every weekend in the 70s and 80s. We're Welsh, and have a decent fish market, we live by the sea. It must have been dirt cheap back then...or he wouldnt have been buying so much of it! He had it soaking in a bowl overnight. Then he fried it, and had it with laverbread (boiled seaweed,) cockles, bacon, fried tomato fried bread Oh you just mentioned your dad cooking saltfish too :) Years back I thought Id go buy some salt fish from the market...it was crazy expensive! I havent bought it since, .until a week ago! From a Turkish grocers, so it was in a packet like in the video and I just checked the label...it's pollock!s!

Well, when you boil this fish its flesh becomes a little plastic so it will stick into your teeth. When you remove the salt by soaking it in cold water for 24 to 48 hrs the flesh of the fish will not develop that plasticity and will be easy to chew, it will spread in your mouth as you grind it and won't stick too much to your teeth.
I've soaked mine in water for the last few days and kept it refridgerated/ stored in a cool dark place - isn't smelling great though. I will fire up the grill tomorrow and hope for the best. Hope it doesn't give me food poisoning lol!
Was a disaster - stuck on the grill outside then was a immediately swarmed by an army of flies (they are one thing I hate) - cut the power, ran inside the house and then came back out to clean up and dispose of it all. Total disaster. I tried it since indoors on the electric grill and its been fine.
You mentioned about the Pollock & this Week I bought a duo on Amazon (UK) of the really big tin of Ackee (by Tropical Sun) & the salt fish, thinking I got a good deal & expecting salt cod to arrive. But when it arrived, to My shock it was salted Pollock. I'm also not happy that the fishing method used was trawler fishing which is all but illegal for obvious reasons so now You've mentioned that the Pollock is lesser quality I've made up My mind to send them back.

Uhmmm...so people boil the salted fish to remove the salt....not sure if it's the same type we ate here....but what we have here, the fish are extra crunchy and we dont spent much work on removing the salt....we just wash it under running water and fry it......it's very tasty. I like the smaller fish better where we can literally eat even their bones....
Best thing to prepare this is when you have bacalhao salted fish is brush the salt off under cold water. Then lay it in a bucket with cold water for 3 hours. Then cook it for 20 min. That's how I do it! My dad is from Surinam and has learned me this his way and it works. Good luck!
I never deal with the bacalhao filets! That's not the real bacalhao fish! It's not real cod fish! These days we deal with Tilapia from Cambodia en Vietnam. When the fish is to big for Tilapia, they sell it as cod fish! and real bacalhao fish isn't cod but Stock fish from Norway. This one is very expensive!
Soaking over night is actually the best method before cooking it. Too much boiling kills the flavor of the fish.

My mom says it helps in removing the salt if you use a lime or lemon when boiling the saltfish. I've found that it works.

Can I refrigerate it while changing the water during those 24/48 hrs?
You are right let it soak in water and just keep changing the water until salt is out!

I make my own salt fish when I go home to newfoundland I usually soak it and keep changing the water for about 24 hrs or more to remove salt

I prefer pollock, just because cod has worms. It's super gross to watch worms crawl out of the fish. Turned me off.
