How to Desalt, Cook and Shred Authentic Salted Cod (Bacalao)

  • In this video, I demonstrate how to desalt, cook and shred the authentic salted cod (Bacalao) and the salted pollock fillets. An updated version.
    1 fillet of the authentic salted cod yields approximately 13 ounces.
    The salted pollock fillets are sold in 1 pound packages.

      Hi Adelina, You are correct! I was a high school teacher and then went back to school for a degree in Accounting. I retired as an accountant. This year I will be 70 years old. Since cooking has always been my hobby, I enjoy making these cooking videos to inform the viewers (especially non-hispanics) of our culture and food history through cooking.       ​@@AidasKitchen hi Aida. Can you eat the pollok raw after you soak it a few times and changing the water? in other words, is it safe to eat without cooking?

      Hi Rosie, I would never recommend anyone to eat the pollock raw after it has been soak. In order to eat raw fish, there are certain guidelines that must be followed or you can be exposed to bacteria that can cause severe illnesses. Consult an expert on this matter.

    This is going to sound weird, and I apologize for that 😂…but I just wanted to let you know that I appreciated this video so much. It was so thorough and clear…it was paced at the right speed and your tone was that of one’s favorite teacher. I have been craving bacalao guisado and decided that I want to make it myself. I have no idea if the guisado will come out great since I’ve never made it before lol, but I will at least know my preparation of the bacalao will be PERFECT thanks to you.       Hola, I appreciate your comment very much. I love to provide as much information as possible so that my viewers are willing to try the recipe. For your information, I have a stewed codfish with eggplant cooking video on my TH-cam channel. You can, however, omit the eggplant. If you omit the eggplant, the recipe will then be stewed codfish (bacalao guisado). I am currently in Puerto Rico, learning new recipes. Have a great week.

    Hi Aida! I have a question for the pollock codfish. My mom taught to just rinse the excess salt from the pollock codfish and bring it to a boil rinsing between boils, until i get the desired texture and saltiness.is her way of cooking correct? Thanks for your tutorial on how to cook codfish and pollock codfish. Pollock codfish is a staple in our home. She taught me how to cook the pollock codfish the way I described above. Boil rinse boil rinse until i get the desired of saltiness i desired. I hope you understand my question. Happy New Year!

      Hola Violet, There are two different methods of desalting the codfish. Your mom's method and my method. They both have the same results. The only difference is that if you soak the codfish you usually have to boil the codfish only once but if you don't soak the codfish, then you will probably need to boil it several times. Some individuals prefer spending time soaking and less boiling while others prefer spending more time in boiling than soaking. There is no right or wrong method. It is a matter of your preference of desalting the codfish.

      Hola Violet, We try to cook how our parents taught us. My mother always soaked the codfish. In our culture, the rice is also cooked 2 different ways. Some individuals fried the rice before boiling it while others just boil the rice.

    My friend Cook's The Salted bacalao that you find in the store in a bag he does not put it in a bowl and put it in the refrigerator for hours he runs it underneath cold water in the sink and then he boils it three times in the pot with boiling water then after that he Cooks It

      Hola Mary, There are many different methods to prepare the salted bacalao. I rinse the bacalao first in cold water just like your friend. I then place the rinsed bacalao in a bowl for 3 to 4 hours, making sure that I drain the water and add fresh water several times during this time period. This process will remove a lot of the salt that I only need to boil the bacalao ONCE. By NOT soaking the bacalao in water for several hours and changing the water, you will need to boil the bacalao 2 to 3 TIMES to reduce the salt content to your liking. I desalt the bacalao, using this method whether I use authentic cod or salted pollock fillets purchased in a bag. Your friend prefers the boiling process while I prefer the soaking method. We both come up with the same results. For your information, when I am in a rush to prepare the salted cod and don't have the time to soak it, then I will definitely have to boil the salted cod several times after it has been rinsed. As I mentioned earlier, it is a personal preference of food preparation. Enjoy the Holidays and thank you for watching my TH-cam video.

I just wanted to demonstrate how to prepare the authentic salted cod for those individuals interested and explain why we consume today the salted pollock fillets since I love food history.
