Wow, thanks for your kind words! Yes, that’s how my grandma made Geotjeori and I didn’t give it much thought at first. Knowing the reasoning behind it, it does make a difference!
I goggled it lol 😜 and it suggested substituting Korean plum extract with 1T water+1t apple cider vinegar+1/2t sugar. I just tried it myself and it actually tasted pretty pretty similar. Of course, the plum extract has more pungent and complex flavours, but I think you can get away with this combination. In saying that, you can omit it as it wouldn’t drastically change the flavour. Since this isn't a fermentation and made to eat fresh how long will this recipe keep in the refrigerator? Also, if I don't have access to salted shrimp would adding extra fish sauce or anchovy paste work? I subscribed and saved this recipe . Thanks!
It should be good for 7-10 days in the fridge. It tends to get more watery though. You can make kimchi stew or kimchi pancakes after waiting it to become slightly sour. Thanks for subscribing! Really appreciate your support. 🤗

You can premake the sauce but I wouldn’t leave the sauce for too long. Max 5-7 days?
