I liked the video, but suggesting some corrections...
Friction between the plates does not increase with the increase in area of contact between the plates. This is a basic property of sliding friction. But in case of rolling friction, it depends on area, that is why wider wheels gives lesser mileage.
So here two methods of increasing grip between clutch plate is either, increase the pressing force between them by powerful springs or by splitting the torque into many parts so that each set of plates handle relatively lesser torque that before.
So using more number of plates is to split the torque, but not to increase the total area.
(If 5 sets of plates are used, then torque handled by each set of plates will be only 1/5 th of the actual torque )
I was about to write the same then found it well explained here. Here only normal force (spring force here) and frictional coefficient (depends on material and surface finish between two mating surfaces) solely responsible for the amount of torque transferred. Torque will also split to the number of plates to reduce the heat generated on the plates.
