Hi all! The ice cream season is here, I wanted to create a sorbet recipe without an ice cream maker that is actually airy and creamy just like the ones with an ice cream machine. I tested many many times and came up with this one!! I hope you'll like it💕

Great stuff. I am a professional chef of over 40 years. I don't have an ice cream machine at the moment, so I was researching methods without a machine. Everything you do makes professional sense. The only tip I could give you on this, is....at the point where you transfer the mixture into the glass bowl, sit the glass bowl in a larger dish containing ice, add salt to the ice to produce a freezing cold glass bowl that will give you more working time and wont give that first layer that touches the glass the chance to melt (BTW, I do realize that you have chilled the bowl). I am about to go off and do this technique now. I personally dislike the word recipe. A recipe gives you one dish, a technique, gives you unlimited dishes depending on your knowledge and experience. Well done you.

You can probably replace berries pretty easily. I have two bags of frozen raspberries I was thinking of using for this.

Hello, is 7g gelatin before or after soaking? Because it would take 4 dried leaves to reach 7g but just 1 soaked. Thank you
