I love the dedication. The menu looks beautiful. I was not aware that you can’t eat animals in Buddhism. Did not the Buddha like pork and infact died of contaminated pork . Perhaps you can eat what is given as Bhiksha.
U get hungry a short while after eating veggies because they don’t provide much calories. Its a good lifestyle but cannot be sustained for someone who does a lot of physically demanding tasks.
I have to disagree. As an Indian, we have near limitless Vegetarian options(check out Idli, Dosa, Roti, etc) I do agree that vegetarian meals do lack some essential nutrients, especially protein if you don't deliberately add legumes But after a hearty Indian vegetarian Thali you will definitely feel full
