apparently, the chef here, who is also the owner of this restaurant, Takamasa Osawa, discovered Biryani during his student years in India, he then trained in multiple restaurants on how best to make it. Then he opened his restaurant in Japan that serves only biryani during lunch time and dinner time.
I became fan of his tidiness, seamless cutting, and good order in kitchen. Hard to find cleaner kitchens in many parts of the world. hats off, "harigato gozaimas".

He really surprised me, and very happy to see that one of our country's culture adopted by others country's people. So what he is a Japanese chef, culinary arts doesn't have boundaries. I am very happy to see that he has that much confidence in his skills and attempts to make the cooking style of others country's one of the most popular dish. I have seen countless biriyani making videos, have made countless biriyanis, and tried a lot of biriyanis from around as well. But this is a totally new technique and approach towards making a biriyani, and that end result looks insanely good. Perfection infact. And wonderfully clean as well. The trademark Japanese way. I would love to try this someday. Its amazing how food is an amalgamation of cultures. And I wonder if they have added a spin of their own somewhere in there. What's funny is I have never spent this much time on a video intently to see how its done. Usually I move between something or the other. This one kept me glued till the end.

Khaaamoossshhhhhhh …Anyone criticizing his craft …our cuisine is not rigid it allows for people to adapt it but it needs work and my man over here absolutely nailed it and I’m sure it tastes as good as it looks. you are a credit to your craft
typically the 'base' or 'masala' is made with onions, ginger garlic fried together, then the meat which was marinated with the spices is added with the tomatoes. Once the gravy and meat is cooked through, the semi-cooked rice is set on top and left to complete cooking, drenching up the flavors of the gravy. while his process may not be the correct order, it seems to have worked out in the end product, the most important part. the shortcuts made with frying the tomatoes with yogurt, the spices and the mutton on their own seemed to be an economical choice made by the chef. This made the entire process more efficient for cooking a large batch as he did, I believe that most restaurants actually make biryani in a similar approach. Cooking in this quantity is already difficult on its own on top of that making an exceptional biryani as he did takes a lot of trial and error. It's evident after observing his methods that he has practiced this many times to perfect it and maintain authenticity. He did an exceptional job! I am looking forward to trying this when I visit Japan. Arigato Gozaimasu chef, for taking an interest in pakistani/indian cuisine!

This is one of the most cleanest and the most delicate and precise step wise cooking of biriyani I have seen . Definitely would try it if I ever make it to Japan. The dedication and the technique even though not traditional is very cool to watch

There are no traditional ways to make biryani but never have I seen one that was made with such technique and precision until now especially by someone who is not South Asian. Hats off to the lad.
@naninani1549 There are several ways to make biryani: Hyderabad Biryani (my favourite), Lucknowi, Kolkata, Sindhu, Malabar, Delhi etc. Then various proteins: chicken, mutton, fish, lamb etc. Then there are vegetarian varieties. Then specialities: Egg, kebab, keema etc. Biryani is made differently regionally. Just accept that.

I think this is the most hygienistic and cleanest way that i have ever seen in the making of a Biryani. There were absolutely no shortcuts used in the making, I can say. Surely there is a difference in the making of Japanese making a Biryani and an Indian making a Biryani. But I totally appreciate the effort chef put in to make that biryani with a tons of quality checks on the meat. I can say this video is kind of a Biryani ASMR.

I have mad respect for this Japanese gentleman for his hard work and unique techniques, despite this not being the authentic way to make Biryani. Its a very arduous task to make the dish even improperly and people train decades to make one perfect batch of Biryani. Well done sir, Well Done!
The concept here is clean. Apart from the use of tomato, every other aspect is very close to Calcutta Biriyani making process. Someone has improvised this process to fit a Japanese kitchen, and it looks excellent.

I have been cooking dum biryani for 19 years now. Never ever have i thought of this way. No matter whatever anyone says hats off to the chef for doing this great job. This is top notch 😍. Far better than eating pan fried briyani (Brits restaurant) way with base gravy touch.
Japanese attention to detail is in full display right from carefully examining each piece of meat, measuring each ingredient and then removing each splinter of bone. The recipe and some of the technique is a bit different but the end product looks good and probably tastes as good. The cook also has learnt how to serve the biryani in layers - something that many Indian chefs fail to do. Very commendable. The only critique I have is that onions look nearly burnt.
@@lathaarun2152 Properly fried onions do that. Burnt onions make the dish bitter. In some Indian dishes like Biryanis or Kormas we also add fried onions during the cooking process.
Onions braised perfectly though a mite over, meat pieces sized precisely, cleansed, cooked garlic & ginger weighed, and so on. No guesswork. This is the Japanese way. Love it, man.

Actually Biryani is Turkic. Bir yan = a side ( meaning a side dish, however biryani is a satisfying main course comfort food, Turkic folks brought it to India. It is common through Turkiye, Persia, middle asia, Pakistan and India
And coke with biriyani is pretty much a classic pairing. Kudos to the chef for picking up on it in his research. But nothing you wont find on the streets of Pakistan or India.

Yum. Traditional ingredients, different method, spectacular results. Fried onions 💯 as well as rice. I'm an excellent biryani cook but have always felt marinating the lamb in yoghurt and masalas and steaming lost something of the lamb flavour that comes with browning the meat. I'm going to use this method next time I cook lamb biryani but I will rather coat in oil and sear under a grill. NB, chef, a few hints to take your biryani up by a notch: 1. Add a few cinnamon sticks and cardamon pods to your cokking rice. 2. Add half a bunch of bruised mint leaves to your meat layer just before covering with rice. 3. Sprinkle left over fried onions to rice before steaming. 4. Drizzle a few tablespoons of buttee on the rice before covering to steam. 5. For a luxuirious version, add a gram of crushed saffron soaked in milk and scattered over rice before closing pot. Im definitely coming to taste your biryani when i visit Tokyo. I've dreamed of visiting Japan since inwas 6 years old. Will move heaven and earth to save up to travel there before I turn 60 in 5 years. This video reminded me to get a move on with my visit! OK, so people criticizing must stop. As someone who lives in Japan and has been to this restaurant before this video was shot, I am most eligible to answer. The Biryani was simply the most delicious Biryani I have ever tasted. He learnt different techniques while he was in India, and crafted a unique recipe from all those biryanis. He mentioned Hyderabad, Lucknow, Delhi and Kolkata. The rate is pretty high, but I wont ever complain. Loved it !
I truly admire the way how he makes bhiriyani 1. How he checks every meat piece for any impurities or irregular shape 2. The way he used the aluminum foil paper which can be reused again hatts of to you chef..

I am very happy to see that he has that much confidence in his skills and attempts to make the cooking style of others country's one of the most popular dish. Most hygienic and clean cooking and we can clearly see the dedication the chef put in making the biryani it looks amazing and the video it self is most calming hands down the best cooking video I watched so far
I have seen countless biriyani making videos, have made countless biriyanis, and tried a lot of biriyanis from around as well.
But this is a totally new technique and approach towards making a biriyani, and that end result looks insanely good. Perfection infact. And wonderfully clean as well. The trademark Japanese way. I would love to try this someday.
Its amazing how food is an amalgamation of cultures. And I wonder if they have added a spin of their own somewhere in there.

I've never seen biryani cooked in such a neat-clean-orderly, beautiful manner..I mean, every time I've seen it being made somewhere or I've made it in our kitchen, the place becomes a mad house! I think I can try this Japanese method next time and see..

typically the 'base' or 'masala' is made with onions, ginger garlic fried together, then the meat which was marinated with the spices is added with the tomatoes. Once the gravy and meat is cooked through, the semi-cooked rice is set on top and left to complete cooking, drenching up the flavors of the gravy.
while his process may not be the correct order, it seems to have worked out in the end product, the most important part.
the shortcuts made with frying the tomatoes with yogurt, the spices and the mutton on their own seemed to be an economical choice made by the chef. This made the entire process more efficient for cooking a large batch as he did, I believe that most restaurants actually make biryani in a similar approach. Cooking in this quantity is already difficult on its own on top of that making an exceptional biryani as he did takes a lot of trial and error. It's evident after observing his methods that he has practiced this many times to perfect it and maintain authenticity. He did an exceptional job! Hyderabad Biryani (my favourite), Lucknowi, Kolkata, Sindhu, Malabar, Delhi etc. Then various proteins: chicken, mutton, fish, lamb etc. Then there are vegetarian varieties. Then specialities: Egg, kebab, keema etc.
Biryani is made differently regionally. Just accept that.

I think this is the most hygienistic and cleanest way that i have ever seen in the making of a Biryani. There were absolutely no shortcuts used in the making, I can say. Surely there is a difference in the making of Japanese making a Biryani and an Indian making a Biryani. But I totally appreciate the effort chef put in to make that biryani with a tons of quality checks on the meat. I can say this video is kind of a Biryani ASMR.

I have mad respect for this Japanese gentleman for his hard work and unique techniques, despite this not being the authentic way to make Biryani. Its a very arduous task to make the dish even improperly and people train decades to make one perfect batch of Biryani. Well done sir, Well Done!
The concept here is clean. Apart from the use of tomato, every other aspect is very close to Calcutta Biriyani making process. Someone has improvised this process to fit a Japanese kitchen, and it looks excellent.

I have been cooking dum biryani for 19 years now. Never ever have i thought of this way. No matter whatever anyone says hats off to the chef for doing this great job. This is top notch 😍. Far better than eating pan fried briyani (Brits restaurant) way with base gravy touch.
Japanese attention to detail is in full display right from carefully examining each piece of meat, measuring each ingredient and then removing each splinter of bone. The recipe and some of the technique is a bit different but the end product looks good and probably tastes as good. The cook also has learnt how to serve the biryani in layers - something that many Indian chefs fail to do. Very commendable. The only critique I have is that onions look nearly burnt.
Burnt onions gives more aroma and lil sweetness as Indians or Arabs sprinkle on the top of the end product not while in cooking process.
@@lathaarun2152 Properly fried onions do that. Burnt onions make the dish bitter. In some Indian dishes like Biryanis or Kormas we also add fried onions during the cooking process.

Actually Biryani is Turkic. Bir yan = a side ( meaning a side dish, however biryani is a satisfying main course comfort food, Turkic folks brought it to India. It is common through Turkiye, Persia, middle asia, Pakistan and India
And coke with biriyani is pretty much a classic pairing. Kudos to the chef for picking up on it in his research. But nothing you wont find on the streets of Pakistan or India.

Yum. Traditional ingredients, different method, spectacular results. Fried onions 💯 as well as rice. I'm an excellent biryani cook but have always felt marinating the lamb in yoghurt and masalas and steaming lost something of the lamb flavour that comes with browning the meat. I'm going to use this method next time I cook lamb biryani but I will rather coat in oil and sear under a grill. NB, chef, a few hints to take your biryani up by a notch:
1. Add a few cinnamon sticks and cardamon pods to your cokking rice.
2. Add half a bunch of bruised mint leaves to your meat layer just before covering with rice.
3. Sprinkle left over fried onions to rice before steaming.
4. Drizzle a few tablespoons of buttee on the rice before covering to steam.
5. For a luxuirious version, add a gram of crushed saffron soaked in milk and scattered over rice before closing pot.
Im definitely coming to taste your biryani when i visit Tokyo. I've dreamed of visiting Japan since inwas 6 years old. Will move heaven and earth to save up to travel there before I turn 60 in 5 years. This video reminded me to get a move on with my visit! Thank you!

I'm sorry?! Who the hell is criticising this??? Are you out of your mind?? The precision and speed that goes into making this a perfect product is insane. To all the know-it-alls in the comment section: Listen nobody's needs to be follow your secret family history of your biriyani. The chef here has separated individual pieces of meat from sharp bones and cut the sinews and chewy parts. He even uses a temp probe to ensure perfect "Dum" conditions. Indians/Pakistani/Bangladeshi people get criticized harshly because it is one their expertise. Moreover, the elderly wants their predecessors to learn without any error because they see it as a generational tradition.
Imagine you being an Indian showcasing the art of Anime/Manga or any of the Japanese culture or food; don't you think any Japanese people would be happy as well as excited to see?

OK, so people criticizing must stop. As someone who lives in Japan and has been to this restaurant before this video was shot, I am most eligible to answer. The Biryani was simply the most delicious Biryani I have ever tasted. He learnt different techniques while he was in India, and crafted a unique recipe from all those biryanis. He mentioned Hyderabad, Lucknow, Delhi and Kolkata. The rate is pretty high, but I wont ever complain. Loved it !
I love how they made the biriyani different perhaps to satisfy locals without losing the identity. Must taste awesome.
