- Healthy & Tasty Potato Spinach Recipe - Aloo Palak Fry - Vegetarian Recipe
Spicy , garlicky spinach stir fried along with potatoes, this Indian style stir fry recipe will soon become your favorite.

Ingredients required for making Aloo Palak Fry -Serves 5
* Spinach - 400 gm / 14 oz (weighed after chopping)
* Potato - 520 gm / 1lb
* Tomato - 1 medium/180 gm / 6 oz
* Onion - 1 medium
* Garlic - 4 large
* Kashmiri red chili powder/ paprika - 1 teaspoon
* Turmeric powder - 1/2 teaspoon
* Curry Powder - 1 teaspoon. If you do not have curry powder use a combination of 1/2 teaspoon cumin powder and 1/2 teaspoon coriander powder.
* Salt - I add layer by layer all throughout my cooking so not giving the exact proportion. Use as per taste.
* Oil - 3 tablespoons
Serve with hot steamed rice or roti or a toasted bread.

Thank you Bumbi for the link. I make something similar, but will follow your recipe in detail the next time. I used to make this when the kids were small, they loved it. Made it mild, but with all the Indian spices. I also added some cream then. I sent the recipe to a friend in Sweden. He said because it is season he will substitute the spinach for stinging nettles. They are good when picked young, after soaking in water and cooked they do not sting and the poison is no more. One can pick them in abundance along small creeks, I think in the US too., but do wear gloves.

This was very good! I liked that the potatoes were fried before adding to the other ingredients....keeping them from getting mushy. I did add a wee squeeze of lemon and a handful of cilantro at the end. Thank you for this recipe, Bumbi!! ❤
