My gf makes a version of enchiladas like this! Im mexican american and mixed and shes from Chihuahua so shes always showing me "new" ways to cook mexican food. She uses corn tortillas that she heats up in a lil oil and layers the sauce chicken and tortilla, not rolled. She makes the sauce with cream of mushroom and cream of chicken, and chars jalapenos, cuts them in slices and lets them cook with the creams. The longer it cooks the better it tastes! Its one of my new fave ways to eat enchiladas. She always makes lenteja soup with it too! You should give it a try, you might love it!

I make this but use corn tortillas and Ann canned mild green chiles, and if I'm in a real lazy mood, I make the cream sauce using 2 cups whipping cream, 28 oz canned Chile Verde enchilada sauce, 4 oz cream cheese, 2 cans green chiles, ½ lime juice, garlic powder, cumin, salt pepper, a bit of chicken broth to make sauce thinner. Add shredded monterey jack cheese, cover, bake 30 minutes, drizzle guacamilito and sour cream! Yum

Sautee chopped onions in some oil. Add jalapeno and/or mix of other roasted green chili… add shredded chicken and a little chicken stock. Season with chili powders of choice, salt, pepper, cumin and paprika (reg, not smoked)… mix to combine. You can add a little heavy cream to the chicken for some xtra decadence… but don’t make mixture too wet… allow to cool in a bowl. In same pan do the flour/butter roux, chicken broth, green chili of choice like the video but mix in sour cream, cheese of choice (jack or other flavorful melty/stretchy cheese, not motzarella!) and I like a little more paprika (pink color is cute!). Taste for seasoning… To the cooled chicken, mix in shredded cheese, fresh cilantro and a little lime if you like. Taste. Roll up in your tortillas, top with sauce, squish between all the enchiladas and edges a bit… no need to top with more cheese, it’s in the sauce and chicken. It tends to make a solid crust that’s hard to cut through. The sauce will brown, I promise… top with more fresh cilantro to serve. Bake 350 for 30ish min till brown and bubbly. Sever with something tangy/sweet/sour to contrast the super rich and creamy enchiladas. ***can make chicken mixture in advance if you want or go all the way to rolling in tortillas and freeze them (like rolled tacos. Corn tortillas hold up best. Flour works if you don’t mind it being more soft… Trader Joe’s sells a corn & wheat “flour” tortilla that I love for this because it’s a little more sturdy than flour.

She makes a green chilli chicken soup, and she uses the thick soupy base with all the oniony, peppery goodness with tomatillos, anahimes, jalapenos and i think anothe rpepper i dont remember the name of into that sauce and goodness lord it's so good, would recommend it lmao
There’s actually a dish thats somewhere in between what was shown in the video an lasaña, is called pastel azteca. Insted of using lasaña sheets, we use corn tortillas. Its really yummy!!!!
A version with lasagna sheets is really popular in Catalonia where I live, called "Canelons" (from italian Canelloni). But we use bechamel in the filling and outisde. Also grilled cheese on top :)

If they want to use flour tortillas they should buy or make a much thinner flour tortilla. I write this as someone who used flour tortillas in my enchiladas for years. Regular floor tortillas get all thick and gummy plus I've seen kids choke on them.

I love cilantro. I don't see at all where people say It tastes like soap. I had a passenger of mine tell me that and I was like what from where? I guess I wouldn't see that since I love it. But I also love green onions. I wouldn't put cilantro on the enchiladas. Because it would become saggy. I like it more in soups or as fresh in a salad and some other stuff, but not on the enchiladas. The green onions are the best for enchiladas 😋

I grew up eating Mexican food in a Mexican household and now that I’m older I’m cooking everything else but that. I didn’t realize there were so many different foods to try from different cultures. I grew up eating Mexican food in a Mexican household and now that I’m older I’m cooking everything else but that. I didn’t realize there were so many different foods to try from different cultures. I love cooking so I constantly try new recipes. I do eat Mexican food when I go to my moms house because her cooking is the best! 🥰🤣
