    Ms Pam i was just thinking why couldn't one roll the whole amt out onto a lightly floured parchment, shaping it into a square & with another pc of parchment on top press or roll it out as thick as you want it, then after removing the top layer of paper, using a case knife, cut into equal amts... then pick up 1 at a time & round off the corners or to desired frying shape. I saw meatballs done that way, and it made the process go much faster than scooping out 1 ball at a time with a scooper.

    My mom used to make these when we didn't have salmon. A good alternative. LOOKS DELICIOUS! THANKS PAM!

    Very similar to crabcakes that I make. I never thought to use chicken. I use an ice cream scoop for consistent portions.

      I do that too for my salmon patties, the ice cream scoop is the perfect size. I just flatten them a bit and flour them before frying.

The first is my sweet husband!❤ I've made something similar to your chx croquettes but made them with ground chicken. I have forgotten about my recipe. Will be trying yours very soon! Love your site.     Yum! I always put the veggies in raw, I like the crunch and the wide awake "wow" you get when you bite into it.
    I was thinking sage at the beginning, but the Old Bay sounds good too.
    My mil used to like margaram (sorry, spell check is disabled) on everything chicken. I might try that, too.

    I like this idea oh, I'm not a big fan of peppers, I will eat onions on occasion so I'm thinking I would use finely chopped celery, parsley and tarragon in the chicken mixture. I would garnish with chopped green onions, and serve with the same sauce. Thanks for the idea!

      I don't believe you can cook the salmon ahead of time. Salmon can get overcooked more easily than chicken. So, you would have to fry it so that the salmon cooks also, not just the outside breading.

    The dipping sauce can be some type of gravy instead of a mayo based sauce. Maybe use turkey gravy.

    That looks like " patties/cakes " not croquettes 😊 another take on the ones i make. have to try this recipe 😅

      I was wondering if anyone was going to notice, a croquette is not the same thing as a patty. But nonetheless, they look easy and delicious. i used to make Salmon croquettes all the time and they were oblong, round, and oval shaped.

      Croquettes have more breading and they are round balls. Patties are flattened. These are patties.
