ever tried inverting the sugar first? If you dissolve the sugar in water, add a bit of lemon juice as a catalyst, you invert the sugar, basically breaking down the higher chain molecules, so most of the sugar will become glucose. That may make the fermentation more efficient. Just a thought.

First started with pineapple beer then made a still out of a pressure pot and copper coil into a bucket as the cooler. Please would you assist in giving designs of your still? Do you have a book on all your years of experience. So would like to know more about stilling and mash mixes. Great show keep it going. Many thanks Marc
Hi Paul, Thank you for the comment the idea of the channel ia to try recipes and give feedback on them, also some experiments with yeast and so on. So to answer your question, yes I will be filming the process, and givi g feedback. I want big lemon flavor so will be distiling once no strip only spirit, the peels will be added to the gin basket to give some strong citrus flavours
Hi Vossie, The Epsom is a water condition step the help the yeast in the very ACID wash, it will bring the ACID to a level so the yeast will actually work.
Great recipe I also prefer fresh over processed I always check the reduced rack in the produce section I call it the half rotten rack lol not so expensive that way

I think if I were planning to make a lot of fruit juice based alcohol where it wasn't possible to purchase quality juice in bulk (lemons and oranges are good examples), then I would invest in a good slow-speed auger-style fruit juicer. Some can be had for less than 200USD, but the better ones will be more expensive.

Off the bat a few things I'd do differently. 1. Brown sugar will give you a better wash in terms of time to final SG. 2. yeasts of different types can be cannibalistic and your wash can stall .Use brewers yeast, it's easy to come by and you will have more alcohol in your wash to distill out. 3.Water temp when you hydrate your yeast is important. 30C is your friend, never higher.4. Lemon peels can be dried in a biltong maker.

How do you keeping your mash warm using lights
Hi it is halogen down lights so they give off alot of heat.
And I also use a fish tank heat in the cold months.

Will be single run with some reflux. Want alot of flavor out of this wash.
