Very similar to cuored's. I used about 50 home grown lemons, so not as much juice as store bought but ended up with 1 250 ml ( 1 n quarter Litre) S.g. was 1.030. Then added sugar to 1.070. Used some bi carb to bring up the acidity a bit. That was it. Once done, added about 7 g sugar but that was too much for the little 350ml bottles.

1160 gr of sugar = the one from fruits + added. In case of lemons 1kg of lemons + 1160 gr of sugar + 4 L of water + 5 gr of champagne yeast = 15-18alc wine.

Nice work man. Try from dandelions. Find many new taste+ when do it you add some oranges and lemons peels and juces. To wine 1 kilo dandelions mix with 1 kilo sugar mix. Stay it in some wessel for 2 weeks or month in warm. It will be a syurop. It could stay for ages. Wery tasty and helth. From this syurop try to make wine. Add some lemon and orange juice and peels, because it haven,t enouf acid. Try it. ❤
How do you stop the fermentation after you bottled the wine? Most wines need chemicals (Sulfites, Potassium Sorbate) to stop the fermentation in the bottle if stored at room temperature. Do you keep the wine stored in the refrigerator? This is not a dry wine, so there will be sugar remaining.
I don’t stop it , but when the sugar finish the fermentation stops, or like here when the alcohol and the sugar level are too high the fermentation stops

Limes will have some bitterness to them and be careful not to add any of the pith (white part of the skins). Orange is tasty, but needs quite a bit of time to age, it can be very funky when still young. But both work well.

I've tried this with yeasts that supposedly can tolerate 16% alcohol with yeast nutrients and the final wine was rather dry with quite a kick. Be careful when serving this wine chilled, tastes like lemonade and you'd be surprised how quickly it can get you drunk

Description from Nourished Kitchen: "Kvass, a traditional Eastern European fermented drink typically made with stale, toasted sourdough rye bread. While bread kvass is the most popular, other versions exist including those made with beets and fruit. It tastes of honey and malt, similar to a cross between a blonde beer and mead; however, it contains much less alcohol than these drinks. Owing to its brief fermentation cycle, it usually contains as much alcohol as other similar drinks, such as kombucha or water kefir, ranging from .3 to 1.5% (1)."
