Egg yolk is never supposed to be grey like that..if it is, it is grossly over-cooked.
They guy should have turned those eggs over for about 30 secs to a minute so that they were cooked on top - they weren't cooked through enough. Alternatively he should have spooned the oil over them until pink. Otherwise - good effort.
Yes they were cooked. The yolk is supposed to be runny while at the same time he poked around it to make sure that everything else got cooked properly and it's not slimy. I do agree that he could've spooned some oil over them a couple of times, but overall I think those were made great.
Still I don't know how safe in general are the eggs in India to be eaten without being 100% cooked. There are countries where you can afford to leave the egg semi-cooked because you know it's safe and you can even eat them raw, while there are other countries where it's highly unadvised to eat the eggs in any other way but thoroughly cooked.
I understand eggs are a great protein source but cooking it with piles of oil defeats the purpose. I still don't understand why these "dishes" are cooked with extreme amounts of oil and butter! There's nothing healthy about these omelets...absolutely NOTHING!!
