I don't see how this is the most hygienic. Don't even know why that matters. There's other ways to get people to watch other than using pointless clickbait.

Typical indian spices: red chilli powder, turmeric powder, garam masala, cumin seeds powder, coriander powder. These are the main ones and easily available ones. He also used the paste out of mango pickle but you can ignore that. To garnish it with some extra spices, at last, you can try: black salt and chat masala.
