Love Escarole and beans, I use chicken broth in mine. I moved from NJ to PA and can't find escarole. I've called several farm markets and no one grows it here. I guess I'm in Amish country now and it's not so popular. Wish I had some now. Stay well and safe.

My father was Italian but he never mentioned it. Yes! The fresh bread would be good with it as well. It does seem like it would be nutritious as well. We live not far from a wedding venue that has fireworks at the reception. We have not had good air quality lately due to the fires in Canada so we have been staying indoors with the windows and doors closed. The Governor of New York announced that we will be having the summer of haze. It really is awful. If the air quality is bad we wear a mask when outdoors. If we are outdoors it makes your eyes burn and you can sometimes smell the smoke. So are outdoor plans this summer will depend on the air quality. Hi I hope you enjoy. We have been hearing fireworks the last few nights and they probably will continue until the 4th. All the furbabies hate it. We had a dog and she would get so frightened I would have to take her to the basement and blast the TV so she would not hear the fireworks. I’m glad I’m still learning about the best way to cook things from the garden so as to keep the nutrients in. My system really seems to like dark green leafy vegetables, and I’m glad you reminded us to maybe skip par boiling. I guess the escarole tastes better to some, but we don’t do that either. Any time you boil and drain, you do lose vitamins, and we don’t want that. So we cook these just the same except that we will often trade out for spinach if our garden is really coming on. As you mentioned, spinach leaves just get covered with dirt and sand. They need a careful wash too. It takes a bit more time, but it’s better than eating gritty greens! The olive oil and the garlic add just the right amount of seasoning, making this a nice light summer dish.

My grandmother and aunt used to use escarole frequently (and to a lesser degree on this one, my Mom--just because we had so many other things on the farm). My favorite way to use it is even more simply, in chicken broth, with "egg rags" (scrambled eggs drizzled then stirred in), and a hearty sprinkle of Romano cheese over the top. I really hope this humidity and smoke breaks -- I'm roasting and dripping in the house.🥵 Been keeping the windows and doors mostly closed to keep the particulates out. No soup for me in this weather, for sure! Will try to make it outside tomorrow to throw a couple hamburgers on the grill. Hope you all enjoy your day!🇺🇲🌭🏖️🎆

But I'm familiar with cabbage and lettuce and needing to wash those. -- I'm a little surprised you saved a step by using the canned canellini (sp?) beans, rather than making a pot from dried beans. hah, I'm used to that for pinto beans. -- This looks good, pretty simple, tasty and healthy.I'm curious how much the escarole will cook down, either like cabbage or like spinach, leaving the beans with the leafy vegetable as a sort of side note. -- Just watching the intro now, where you are sautéing the garlic and about to add the beans and escarole, any other ingredients.
Huh, that turned out different than I expected, and the proportions, the amount of beans to escarole, was different. Looks very good, and oh yeah, cheese. Heh, I'd agree with Grandpa about wanting some good bread with it. -- I've had trouble finding garlic butter spread at the store, for making garlic bread. that might be a recipe idea. I presume you mix butter and fresh minced garlic, maybe parsley too. but that on a good baguette or other bread, mmm.
We love escarole and beans. I use canned cannellini beans when I want to put this meal together quickly. Garlic bread is so easy to make. I mince some fresh garlic mix with softened butter and spread on top of a sliced in half loaf of Italian bread. You can also add some parmesan cheese on top if you like. Place on a cookie sheet and broil on high until the bread is lightly browned. Take the bread out of the oven and slice up. Enjoy! If you have no fresh garlic you can use either garlic powder or granulated garlic.❤️Grandma👩🏻
My Italian uncle made his wine in his tub and he would give bottles out at Christmas but when questioned about where he showered he said he used that tub I just couldn’t try the wine picturing him showering above it. Reminded me of your neighbor
It’s funny how greens are regional. When I visit family in Philly, escarole is available at any grocery. When I return to northern Virginia, there’s no escarole anywhere. Not even at Whole Foods. Only kale, collards, and spinach. So I’ll probably use spinach until I can get some escarole again.

Escarole is high in nutrients similar to what kale offets but IMO tastes a whole lot better.
