As a french guy, i can give you a tip : as the bechamel is quite difficult to do proper, you can use crême fraiche instead. It is woeking perfectly and taste awesome. And it takes half the time ;). I love this channel. I cook myself quite a lot as soon as i find some time and still want to try ur tarte tatin recipe..keep going. :)

If you want to irish it up a bit, dunk the bread in eggs whisked up with a bit of Guinness before cooking it in a scillet! Then add the toppings and give it a few minutes in hot oven! Voíla: A Croque Caoilfhoinn!

Sorry Donal. I did some checking and you were correct. Why do I question you? The Madame is the sandwich with the fried egg on top. The Monsieur is the same sandwich without the egg. I learn something new every day.

As chef John always says "Hot roux, cold milk=no lumps". No needs to trickle the milk in, you can just dump it in one go and then whisk and no lumps will from. I tried it and got no lumps.
I'm seriously missing out because when it comes to sandwiches I'm an instant-gratificationist (not a word) in that I need to be able to put fillings between slices of bread and eat it within 5 minutes of making it. There's so much prep to this sandwich that I just don't have the patience (or discipline). If it's a proper meal, I can easily put in the work. But a sandwich? That's a snack to me. Looks amazing though.

It's kerrygold butter and it delicious. That brand of butter is available in the USA but for some reason tastes better when you are in Ireland.
