  • The winter time is the best time for soups. They warm us up and keep us relaxed. This potato and leek soup always warms me up. It's really easy a fast to make.

    📜 This recipe will be good for 2 people.
    🔹 Ingredients: 🔹
    - 1 leek
    - 3 potatoes
    - 1 tbsp olive oil
    - 2 sprigs of thyme
    - pinch of salt
    - pinch of black pepper
    - pinch of cayenne pepper
    - 400 ml / 1,6 cups vegetable stock
    - 1 bay leaf
    🔹 Preparation: 🔹
    1. Clean your leek. Remove the green part and save it for other dishes. Dice your leek.
    2. Dice up your shallots and potatoes.
    3. Heat up 1 tbsp of olive oil in the pot on medium high heat and add in your shallots and a pinch of salt. As soon as they become translucent add in your leek, pinch of black pepper and mix it well.
    4. Add in your diced potatoes, mix, and cover them with 400 ml / 1,6 cups of vegetable stock.
    5. Add in your thyme, bay leaf and pinch of cayenne pepper. Mix everything well and bring it to a simmer.
    6. Once simmering lower the heat to medium and cook everything for about 15 minutes or until the potatoes become tender.
    7. Once potatoes are cooked, turn off the heat and blend the soup with your immersion blender or leave it as is.
    8. Server with with extra fresh time and rye bread.
