    Whoa--1300 home canned jars of food. I feel like I've had a productive year when I've canned 300.
    Today I canned French onion and chicken vegetable soups. Also this year: pork with onions, pears, applesauce, tomato juice, apple slices, grape juice and peaches. I still want to can a lot more applesauce and maybe more apple slices. I tried something new--dehydrated 2 1/2 large tubs of spring greens and will powder them to put into smoothies.
    Your pantry looks like magazine worthy.

    • @barnetmountainhomestead9583
      @barnetmountainhomestead9583  3 ปีที่แล้ว +2

      It can change. We've liked most soups and chili. We prefer to raw pack sausage, chicken, and pork, it doesn't seem to change the flavor as much as say canning cooked ground beef.

      There are several ways to can it. I raw pack ground sausage and then brown it when we open it. We mostly use it for gravy but I haven’t found it has an major changes, it doesn’t make as big of chunks that way though.

    I haven't started canning yet.
    Are these pressure canned?
    I also heard that canning tomato isn't safe?

    • @barnetmountainhomestead9583
      @barnetmountainhomestead9583  3 ปีที่แล้ว +1

      I do both. Low acid foods like meats and green beans I pressure can, high acid foods like pickles and fruits I water bath. There's some controversy over water bath canning tomatoes. In the US it is recommended to pressure can them however many many people in other countries water bath them. I pressure can ours. That's how I was taught.

      We keep the house between 60-70. Canned foods should be stored between 50-70 F. You don't want major temperature swings, direct sunlight, and I find the closer to the kitchen the better! Other than that follow proper canning times, temperatures, and only store items that sealed properly.

    I mean no harm but I see a lot of DUST which to me indicates that not a lot of 'Rotation' is happening. With a 'canned stash' that big it seems to me you should be at the 'rotate/replace' stage not STORAGE. You've DONE and completed the 'storage' level, now it seems it should be about making sure you don't go BELOW a certain point in your storage without refilling.

    • @barnetmountainhomestead9583
      @barnetmountainhomestead9583  3 ปีที่แล้ว +1

      Thanks for the concern. All but the apple butter was canned this past year (in total it was about 1300 jars in 2020). We "rotate and replace" every year. As for the dust we are remodeling both our kitchen and the room beside this. I truly wish drywall didn't make the mess it does.

    If it all about looks... it’s nice to look at I guess, but certainly not necessary.... just takes up room I could use for something else...it’s food in glass. I’m not sure in this day and age what the point is with groceries usually within driving distance that is unless one lives in the boonies... you are just trading work at one point in time for work at another... can can can and then heat up whenever one wants to instead of cooking fresh... as far as prepping goes... if a tornado, fire, earthquake or flood takes out your panty you are no better off. Not something I’d waste my time doing.
