When you slow it down, it’s not that awesome. All he did was hold the bottle and cap opener and hit the end of the cap opener
Interesting. It's intriguing how he uses a little soda to get the quinine from the tonic water to the level he wants it. Not a "pure" gin and tonic, but it's not meant to be, and it looks wonderful.
Galliano is sweet, and so is tonic, so some soda is needed for balance.
The soda water also has minerality, so that may be some of it (assuming the tonic water doesn't also have a mineral water base)
Clarified orange juice is such a cool concept

Why is there no shaker?
It ain't a Gin and Tonic (style) drink, but it's very sophisticated tho and an interesting flavour profile. I'd prefer the Genever over the gin, it will make the mixture much more adult-like. Very elegant preparation and presentation, nevertheless!

Water with carbon dioxide gas (carbonation) and bicarbonate of soda, which is why it's called soda water.

Why Stir the ice and that spill it? Any idea anyone, (At the beginning)
to make the glass colder. so drink stays cold more.
First ice stir is meant to chill the glass, so he doesn’t want to dilute the drink at that point.
Chills down the glass, so that the ice in the drink melts slower. You discard the water, so you dont get dillution. Sometimes you will also see bartenders filling the glas with ice before making the drink in the shaker, then pour out the ice and put in new ice just before they pour in the cocktail
Stir to cool the glass and spill to keep alcohol from diluting.
He did it to avoid that the cocktail keep too much water after the ice is a little melted while refrigerating the glass :)
Why he spinning the ice cubes? Does that have a purpose? Something to do with centripetal motion? 🧐

It is not a gin and tonic.. by definition it is a drink based on the original which led to gin.
